Sustainable Meat Cookery Part 1: Central Nervous System

Favourite Cook Books no.4: ‘Great British Classics’ by Gary Rhodes

I have been meaning to write a post on this excellent cookbook for quite a while, and it is such a shame that my prompt to pull my finger out was the sad and untimely death of Gary Rhodes at the end of last year.

When I was asked to submit my list of favourite cookbooks to the 1000 Cookbooks project, I put New British Classics as my number one choice, my comment at the time being: “simply the best book on British food around. Everything from lowly haslet to lobster.”

Favourite recipes include salad cream, lardy cake, prawn cocktail, rhubarb and rack-on-black – lamb roasted with black pudding.

My favourite books on food tend to be by food writers rather than professional chefs because they write about their love of food and its importance in our culture and history. Chefs tend to be, well, cheffy; there’s no evocative description of the hustle and bustle of a French market, and they assume that you want to be cooking restaurant-level food at home. This is where Rhodes was different – sure there are cheffy dishes like the very complex rich pigeon faggot – but there are basics such as fried bread, porridge and jam roly-poly. Everything is represented and everything has equal billing, meaning that whatever your ability level there is a way in. You can start off with basics like scrambled eggs or go straight in at the deep end with pigs’ trotters Bourguignonne.

The full gamut of British food is here: fish and chips, steak and kidney pie, pork faggots, white pudding, Welsh rarebit, and the massive range of techniques contained within makes it the most comprehensive book of British recipes there is. What’s more, every single recipe works perfectly; he goes through every stage, assuming you know nothing but never patronises. If you don’t own a copy and you’re interested in cooking British food, it really is essential.

The secret to his success was his attention to detail. Every move made, and technique used was meticulous and done with deftness, even the way he picked up an ingredient to show to camera had an air of precision about it. Take a look at this clip from the accompanying BBC programme, where he shows us how to make cabbage and bacon soup, and you’ll see what I mean:

He was a classically trained chef who applied French techniques to classic British dishes, taking them to new heights while keeping them authentic. His approach definitely rubbed off on me when I was teaching myself to cook; use the best ingredients and don’t cut corners, every stage is there for a reason, so you need to understand why it is there. Only when that penny drops will you develop a cook’s intuition. This approach to cooking won him his first Michelin star at the age of 26, eventually receiving an OBE for services to the hospitality industry in 2006.

On television, he was very enthusiastic, polite and well-spoken; he seemed a little odd and socially awkward (as all the best people are), making him all the more endearing. He got me interested in cooking and wanting to spend my precious leisure time in the kitchen, learning new techniques and tackling novel ingredients.

He was rarely off the telly during the late 1900s and early 2000s, his trademark spiky hair and over-enthusiasm caused many to pooh-pooh him as gimmicky. Eventually the fickle eye of entertainment focused upon other, younger chefs and so he stopped appearing so regularly. But his books and their accompanying TV shows are great; his Rhodes Around Britain and Cookery Year series are worth checking out too (his apple pie recipe from the latter is the best in world in my opinion).

He died on the 26 November 2019 at the age of 59 from head injuries after a fall – no way or age to go, I’m sure you’ll agree. Of course, when someone dies, there work is revaluated and I hope people recognise what he did for British cuisine, because he put it on a pedestal when everyone else was looking elsewhere.

Braised Oxtails

He was ‘discovered’ on the Keith Floyd programme Floyd on Britain & Ireland. On the segment he makes his signature dish: braised oxtails. Ironically, by the time New British Classics was published his most famous dish was illegal to eat – cooking beef on the bone was banned because of health fears surrounding the BSE crisis. Eventually the ban was lifted, and I could make it for myself. Back in my pop-up restaurant days it was the main course at my first ever Odd Bits offal evening.

This is my version of Gary’s signature dish; it’s slightly simplified but just as gutsy. It really is one of the most delicious things you will ever cook. Nothing else needs to be said – except ‘cook it’!

Enough for 6

2 oxtails, trimmed of excess fat

Salt and pepper

Beef dripping

Around 100 g each carrot, onion, celery and leek

1 tin of chopped tomatoes

2 tbs tomato purée

Small bunch thyme and rosemary

2 bay leaves

1 clove garlic, crushed

300ml red wine

1 litre beef stock

Season the oxtails and fry in dripping until well browned, transfer to an ovenproof pot, then fry the vegetables until nicely brown too. Tip those into the pot along with the tomatoes, garlic and herbs and bring to a simmer. Pour the wine into the original pan and reduce until almost dry. Add to the pot with the stock.

Simmer very gently on the hob or braise in an oven set to 160⁰C. Whichever you choose, it needs to tick away for 3 hours.

Remove the cooked meat and keep warm and pass the cooking liquor through a conical strainer, really pressing the vegetables hard to get all the flavour out.

Throw in a big handful of ice cubes, and stir so they freeze the fat; you should be able to lift out ice and fat in one nice big satisfying lump.

Reduce the liquor to a sauce and season with more salt and pepper, then add back the oxtails to heat through.

Savouries

About five years ago, a reader asked if I could write about savouries, that now forgotten course served up towards the end of a Victorian or Edwardian meal. Well I’ve finally pulled my finger out and written one, so here we go:

The savoury course used to be extremely popular; a delicious morsel, which was salty, creamy and spicy, serving as a digestive after a rich meal, either as a final course, or before a sweet. What often happened was that the gentlemen ate their savouries and went off to drink whiskey and play bar billiards, and the ladies had their sweets and swished off to the withdrawing room for cards, chats and sherry; there were no non-binary genders allowed here, let me tell you.

I’m a big fan of the savoury course and I often include one in my supper clubs and pop-ups. They had gone out of fashion by the mid-twentieth century, the only real survivor being the cheeseboard.

Savouries have of course lived on as first courses, canapés, teatime snacks and light lunches, and you will have eaten some of them, and many have already appeared on the blog. Delicious morsels like devilled kidneys, Welsh rarebit, potted chicken livers, potted cheese, Patum peperium, rillettes, angels & devils on horseback and sardines on toast have all been served up by Yours Truly at some point. Two of my favourites are Scotch woodcock – a spiced anchovy butter served on toast covered with a creamy, savoury custard – and Locket’s savoury, a slice of toast topped with ripe sliced pears, wilted watercress, and a thick blue cheese sauce which is then grilled, rather like Welsh rarebit. Delicious! It was nice to see Nigella Lawson championing the devilled egg recently; a woman after my own heart.

Savouries are often served on toast, fried bread or some kind of biscuit or cracker. In Eliza Action’s 1845 book Modern Cookery for Private Families, there is just one recipe for savouries which appears to be a proto-croque monsieur, with a small footnote. She doesn’t seem to approve. In the twentieth century, however, you get entire books of the subject, the best being Good Savouries by Ambrose Heath (1934).

What makes a good savoury?

  1. Size matters: it must be one or two mouthfuls, so the best vehicles are toast, fried bread or crackers. However, boiled eggs work well as do oysters in the shell. As long as you can eat it without cutlery, you’re doing good.
  2. Salt: savouries are almost always highly seasoned with salt. This is apparently the digestive part, but it also functioned to give people a good thirst ready for a boozy evening ahead. Salt itself was rarely used, it’s much better to use more interesting ingredients such as anchovies, cured meat and fish, cheese and relishes such as mushroom ketchup, Worcestershire sauce, etc.
  3. Heat & spice: quite a lot of the ingredients served more that one purpose, so most of those listed above fit into this category too, but there was also good old black pepper, English mustard, Cayenne pepper, curry powder and Tabasco sauce.
  4. Strong flavours: other strong flavoured things were used, such as blue Stilton, kidney, liver, game and smoked meats and fish like ham, bloaters and even red herrings.
  5. Creaminess: all that salt, spice, richness and heat was often tempered with something bland and creamy and a variety of things were used for this purpose, such as cream (obviously), egg yolks, savoury custards, béchamel sauces, soft cheeses, brains, sweetbreads, lambs’ fries, fish roes, oysters and left-over poultry meat.

Devilled Chicken Livers

Probably the most infamous savoury is the devilled kidney, but you can devil lots of things. I pride myself on my devil sauce, and at The Buttery devilled chicken livers on toast became a rather unlikely signature dish. This recipe can be easily adapted if livers aren’t your thing: fish roes, kidney, brain, lambs’ fries, left over roasted poultry, mushrooms and even tofu can all be devilled with great success. My favourite is chicken liver because it has all of the qualities listed above in abundance. It’s a good idea to make extra devil sauce as it keeps in the fridge for a good ten days or so, and I can guarantee, you’ll be wanting to devil everything you eat from now on! Here’s how to make it.

Serves 2 as a light lunch or snack, or three as a first course, or six as a savoury course.

For the devil sauce:

2 tbs English mustard

2 tbs Worcestershire sauce or mushroom ketchup, or a mixture of the two

1 tbs vinegar

good pinch of Cayenne pepper

dash of Tabasco sauce

freshly ground black pepper

Simply beat all the ingredients together – taste and add more Tabasco and pepper if you like. There’s no need to add salt.

For the livers:

6 chicken livers

a decent knob of salted butter

the devil sauce

3 or 4 tbs double cream

1 slice of crisp toast per person

chopped parsley

First of all, check the livers for any bitter green gall sacks, which are often accidentally left on. If you sport one, snip it off with scissors.

Get a frying really good and hot and melt the butter. As soon is stops foaming, add your livers. Try not to disturb them. After 2 minutes, turn them over and cook for one more minute. Next, add most of the devil sauce and fry a further minute, making sure the livers get coated in it. Add the cream and let form a lovely rich sauce, turning the livers over in it. Have your toast ready on plates so you can top it with the livers and then the sauce. Scatter over some parsley and serve immediately.

Snipe

Last week I was very excited to hold of some snipe, a very rare treat indeed. I roasted them and got them on my menu. To eat them in the traditional way is, by our modern standards, rather macabre; they are cooked and roasted completely whole. Guts and brain are eaten.  It’s not for the faint-hearted, but, as is often the case, they make delicious eating. I was worried I had gone a little too far, but the people of Levenshulme did me proud.

So here’s a post all about snipe and how to roast and eat them in the traditional way.

Snipe in brief:

Season: 12 Aug – 31 Jan (England, Wales & Scotland); 1 Oct – 31 Jan (Northern Ireland)

Hanging time:  2-3 days

Weight: 150g

Roasting time:  10-15 minutes at 230⁰C

Breeding pairs in UK: 80 000

Indigenous?: Yes

Habitat: Mainly marshes and wetlands, but also heathland, moorland and water meadows

Collective noun: wisp (when in flight); walk (when on foot)

What is a snipe? Well Laurence Andrew, writing in his tome The noble lyfe and natures of man of bestes, serpentys, fowles and fishes… (c. 1527) has a pretty good stab and describing it (though I’m sure the snipe does not get its bill stuck in the mud Natural Selection would have something to say about that!):

Snyte [Snipe] is a byrde with a longe bylle & he putteth his byll in the erthe for to seke the worms in the grounde and they put their bylles in the earthe sometyme so depe that they can nat get it up agayne & thane they scratche theyr billes out agayn with theyr fete. This birde resteth betimes at nyght and they be erly abrode on the morning & they have swete flesshe to be eaten.

Weighing in at an average of 150g, the snipe is our smallest legal game bird. They are not an introduced species like the pheasant, red legged partridge or rabbit, but indigenous to the UK and Ireland (where most reside). There are around 80 000 breeding pairs in the UK, but these numbers increase substantially when around one million individuals flock to the country to overwinter.

Normally, shooting indigenous species holds up a red light for conservation – and rightly so, it should always come first, but in this case the snipe have the upper hand because they are so damn tricky to shoot.

They are secretive, highly camouflaged birds that use their very long bills to probe mud and sand flats for tasty creatures to eat. When driven at a hunt they fly in zig zags and are quickly gone again, this is why a group of them is called a wisp. (It’s no surprise, then, that especially good sharp shooters in the armed forces became known as snipers.) These birds are almost self-managing in their difficulty to hunt!

As a food they are delicious, indeed they are considered the finest eating. They are wonderfully rich and tender, and although they are small, a little goes a long way. Winston Churchill once demanded ‘a brace of snipe washed down with a pint of port’ as a hangover cure whilst on a transatlantic flight to Washington DC. Their carcasses make excellent stock.

Not just the leg and breast meat are eaten, but also the brain and the trail – in other words, the innards of the bird, usually scooped out and spread on the slice of toast it was roasted upon.

Don’t be repulsed by this! Your first worry is probably that the guts will be full of the bird’s faeces, well worry not, the snipe (and its larger cousin, the woodcock) evacuates its bowel as soon as it takes flight. Your second worry, presumably, is that you are eating gory intestines, liver, heart etc. Again, nothing to worry about here either! It is all very soft, rich and tender like a lovely warm pâté.

The head is cut in half lengthways so that the brain can removed or sucked out.

This is ancient finger food.

Sourcing snipe

As you will have guessed, finding snipe for the table is tricky. I’ve only ever seen snipe three times in butcher’s shop windows so my advice is to make friends with someone who shoots, because only a few will have been shot on any single hunt, and therefore it’s unlikely there will be any surplus for the butcher to pick up. The chances are you’ll probably have to finish the business of hanging the bird(s) yourself.

Most game birds are sold in ‘braces’, i.e. pairs, usually a cock and hen, but snipe actually come in threes, or ‘fingers’, so-called because that’s how many you can hold between the fingers of one hand.

These tiny birds do not need to hang for long, just 2 or 3 days. If it is unseasonably warm or being hung indoors 1 or 2 days should do the trick.

Preparing snipe for the table

You are to observe: we never take anything out of a wood cock or snipe

Snipe are extremely easy to prepare if you are roasting them:

  1. Pluck away the leg and breast feathers. If you like, remove the skin from its head.
  2. Truss the snipe with its own beak, by pulling its head down to its side and spearing the legs with its long bill.

Some recipes as you to remove the trail before you cook it (sometimes to be fried up with butter and smoked bacon). To do this, make a small incision in its vent and use a small tea or coffee spoon to remove the entrails.

Snipe can also be cooked just like any other bird if you prefer (but you are missing out on a real treat). Pluck the whole body, or peel away the skin, and cut away legs, head and feet.

Roast snipe, and how to eat it

Per person:

1 or 2 oven-ready snipe

1 or 2 pieces of toast, as large as the snipe

Butter

Salt and pepper

To accompany:

Mashed potatoes or game chips

Roast vegetables

Gravy made from game stock

A sweet jelly such as redcurrant, quince or medlar jelly

  1. If your snipe have been kept in the fridge, remove them and let them get to room temperature, about 30-40 minutes.
  2. Preheat your oven as hot as it will go, 230⁰
  3. Spread a good knob of butter on the toast and lay the snipe on top. Smear two more small knobs over the snipes’ breasts. Season with salt and pepper.
  4. Place the snipe on a roasting tin and roast for 10-12 minutes for medium-rare birds. If you are roasting several, make sure that you leave a good gap between each one so that heat can circulate around them.
  5. Remove from the oven and allow to rest for 5 minutes or so.
  6. The snipe can then be served to each guest with various accompaniments. I think it’s best if each guest carves their own snipe.
  7. Take the snipe off its toast and cut of its head. Use a chef’s knife the cut its head in half lengthways.
  8. Next, scoop out the snipe’s trail with a teaspoon and spread it over the toast.
  9. Remove the legs and cut away the breasts using a steak knife.
  10. Eating is fiddly, so use your fingers to get every piece of meat from the carcass.
  11. Don’t forget the brain – pick up the two halves of the head and use the beak from one half to extract the brain from the other half, then swap. Alternatively, suck the brain out.

Mock Turtle Soup

“Neil, it’s your butcher, Lee.”

“Hi Lee, what can I do for you?”

“Did you by any chance order a calf’s head a couple of weeks ago? It’s the kind of thing you would order.”

“You’re right it is the sort of thing I’d order, but I didn’t, sorry.”

“Well someone did, but I can’t remember for the life of me who it was!”

“Oh dear. Well if you don’t find the culprit, let me know, I’m sure I can take it off your hands.”

And that’s how I became the owner of a calf’s head; and I knew exactly what I was going to make with it once it got my hands on it: the mysterious Victorian classic, Mock Turtle Soup.

Mock turtle soup was invented from necessity – turtle soup had become immensely popular in the 1750s after sailors coming from the West Indies landed a couple of them upon British soil. Sailors would catch them and keep them alive on their ships as a source of fresh meat. They were very delicious, and it’s a surprise that any even made it back. Those that did, were readily snapped up by royalty. Now everyone wanted to get their hands one and suddenly no banquet or dinner party was complete without its turtle soup. At its peak in trade, 15 000 live turtles were being shipped live from the West Indies per year. Of course, these huge beasts were very expensive, and because such numbers were being caught, trade was not sustainable and the green turtles were almost hunted to extinction, driving up price even further.

But why were they so popular? Obviously the royal family enjoying themgot the ball rolling, but their huge bodies were made up of different cuts of meat tasting of veal, beef, fish, ham and pork!

So real turtle soup quickly became out of the question for all but the super-rich, and so mock turtle soup was invented. Recipes vary in their ingredients containing beef, ham, oysters, vegetables, skin, tongue and brain in an attempt to replicate the diverse tastes and textures of turtle meat. One ingredient common to all of the recipes I’ve seen is calf’s head – an economical addition with plenty of tastes and textures in itself. Recipe-writers are quite particular about the fact that the head should have the skin on – the fat and skin adding to the texture and flavour of the dish. My head arrived skinned and it still tasted good. If your butcher sells veal, see if you can get hold of one. Mine cost a fiver!

Some recipes are very complex, but are essentially a consommé of meat served with the meat cut into chunks with various accompaniments such as forcemeat balls (or fish balls or egg balls), fried brains, oysters and fresh herbs.

Mock turtle soup became a British classic; Heinz even made and canned it! Alice in her trip to Wonderland met a real Mock-Turtle, depressed that he was no longer a real turtle. He was quite tiresome if I remember rightly.

I adapted a recipe for an ‘old fashioned’ mock turtle soup from the 1845 book Modern Cookery for Private Families by Eliza Acton, then my chefs Harry and Matthew and I got to work on producing it as a special for the restaurant.

To make mock turtle soup

As the butcher to split the head. As soon as you get home, remove the brain carefully and place in a bowl of well-salted water, cover with cling film and keep in the fridge until needed. You don’t need to include the brain if you don’t want to; it is tricky to prepare, but it is delicious. We didn’t use the brain as we took our time over a couple of days to make this in-between regular food service, and brain doesn’t really keep more than 24-hours. Because the head had already been frozen, we couldn’t re-freeze it either. If you don’t have the same issues as we did, get it cooked! There are brief instructions below on how to prepare brain, but for more detail, check out the sister blog here.

1 calf’s head with tongue, brain removed, split and soaked in salted water for several hours

4kg beef neck or shin

75g butter

1 smoked ham hock

4 large onions, quartered

3 large carrots, peeled and halved lengthways

2 heads of celery, quartered lengthways

Bouquet garni: rosemary, bay, thyme, pared rind of a lemon

1 dsp black peppercorns

Rinse the calf’s head and place in a large stockpot, cover well with tepid water and bring slowly to a bare simmer. Skim any scum that rises to the surface of the water, then cover with a lid and let the head cook for 90 minutes.

In the meantime, heat up the butter in a large frying pan and fry beef until well browned. Add this, along with the butter, to the pot with the ham hock, vegetables, bouquet garni and peppercorns. Turn the heat up a little and bring back to light simmer, letting the whole lot tick over for seven hours.

Carefully remove the larger pieces of meat and bone and strain the soup well. If need be, reduce the resulting broth to produce a more concentrated flavour. Discard the vegetables and herbs and carefully remove the meat from the bone. Skin the tongue and cut away any gristle and bone from the root end. The meat can then be either shred or cut into even-sized pieces.

To finish the soup:

Beurre manie of equal amounts of butter and flour mashed together to form a paste

200ml sherry

½ tsp ground mace

¼ tsp Cayenne pepper

Salt

Double cream (optional)

Forcemeat balls (see below)

Prepared brain (see further below)

Chopped parsley

As you prepare the meat, get the strained stock back onto a simmer. Whisk in knobs of beurre manie until the soup is as thick as you like, add the sherry and spices and season with salt. Return the meat to the pan. If you like, add cream to the soup.

Serve the soup in bowls topped with forcemeat balls fried in butter or lard, breadcrumbed brain slices and chopped parsley.

For the forcemeat balls:

300g streaky bacon, chopped

100g grated beef suet, fresh is best, but the packet stuff is fine too

75g fresh breadcrumbs

1 tbs chopped parsley

1 tsp chopped marjoram

2 eggs, beaten

Freshly grated nutmeg

Salt and pepper

Mix together the first six ingredients together in a bowl and season with the spices and salt. Roll into walnut sized pieces. Fry in butter or lard over a medium heat.

For the brain:

The brain, soaked in salted water for several hours in the fridge

Seasoned flour

1 egg beaten

Dried breadcrumbs

Sunflower oil or lard for frying

A brain is covered by a membrane of blood vessels which need removing. To do this, gingerly place the brain on a chopping board, with its underside facing upwards. Here the membrane is thickest, and is the easiest place to begin. Carefully pull the membrane away. This is quite tricky and takes a little practise. Ease your fingers between the folds and get as many of blood vessels pulled away.

Now poach the brain in salted water for about 6 minutes. Remove, drain and cool.

Cut the brain into thick slices, pulling away any bits of membrane you might have missed.

Set out three plates: one with flour, the other with beaten egg and the last with the breadcrumbs.

Coat the brain slices in flour, then egg, then breadcrumbs.

Heat up the oil or lard in a frying pan and fry the brain quickly until golden brown – don’t overcook! Fry for three minutes maximum.

Fifth Course: Rich Pigeon Faggot with Mustard Sauce

Here’s the penultimate course of the Dinner Party Through Time and it brings us up to the Second World War. The recipe is not actually from the 1940s, but I thought it represented two very different aspects of food culture during this time. A normal faggot is a mixture of pork or lamb offal and offcuts wrapped in a little caul fat and baked. They are of course a national dish and, quite rightly, should be celebrated.

During WWII, meat was rationed, and families could spend up to just one shilling and tuppence on meat per person per week, which got you a little over a pound of meat each. Offal, however, was not rationed so housewives would supplement the ‘proper’ meat with offcuts. This meant that dishes such as faggots were eaten more often.

In contrast to this, Winston Churchill ate opulently in his war room, putting away course after course of delicious, rich and very expensive food and booze. Here’s a typical lunch menu:

He did not hide the fact he was living in this way, indeed people thought the man who was overseeing the war should be living in this way. I doubt that would happen today.

Anyway, I digress.

I thought making a very cheap and basic meal into something rich and indulgent would highlight these two diets perfectly.

It’s a very complicated affair, but it benefits from the fact that you can make it ahead of time and can freeze them – in fact the freezing process helps tenderise the rich pigeon filling.

I can’t pretend it’s my own recipe; it’s adapted from Gary Rhodes’ excellent New British Classics.

Unfortunately, no one took a photograph of them, so here’s a picture of a woodpigeon from the RSPB website:

This recipe makes 24 to 30 faggots.

For the faggots themselves:

6 pigeons

1.8 litres pigeon stock (see below)

2 chicken breasts

350g belly pork

150g back fat

150g chicken livers

2 shallots, finely chopped

2 cloves of garlic, finely chopped

1 tsp thyme leaves, chopped

90ml brandy

120ml Madeira

2 egg whites, beaten

200ml double cream

Pigeon reduction (see below)

Salt and pepper

Caul fat, soaked overnight in salted water

Vegetable oil or lard for frying

Well ahead of time, remove the breasts from the pigeons (or ask your butcher to do it). Use the carcasses to make the pigeon stock (see below). Reduce around 400ml of the stock by three-quarters to use in the pigeon reduction (see even further below).

Coarsely mince the pigeon breasts, chicken breasts, pork, back fat and chicken livers twice.

Heat the shallots, garlic and thyme in a small saucepan along with the brandy and Madeira and boil down until almost dry. Mix this into the meat along with the egg whites, cream and pigeon reduction. Season with salt and pepper and refrigerate.

Unfurl your caul fat and spread it on a chopping board, cutting it into approximate six by six centimetre squares. Take tablespoons of the faggot mixture and roll into balls and wrap each one up in a square of caul fat. Pat each one dry and fry in oil or lard to seal them and give them a nice golden colour. Arrange them in a flameproof tin or pan.

Warm the remainder of the stock and pour it over the faggots. Simmer them very gently in the stock for about 15 minutes and let them cool in the stock then freeze.

When you want to eat the faggots, defrost them and warm them up in the oven. Serve them up with the mustard sauce (again, see below) and some steamed cabbage and some mashed potato.

For the pigeon stock

2 tbs sunflower oil or lard

6 pigeon carcasses

2 onions, chopped

2 carrots, chopped

4 sticks celery, sliced

4 mushrooms, sliced

500ml of red wine or port

2 cloves of garlic

2 sprigs of thyme

10 juniper berries

5 tomatoes

Black peppercorns

Beef bones

Beef skirt

I’ve already written about how to make stock, so have a look at this post for some general hints and tips. Don’t worry, if you don’t have exactly the right amount or variety of stock veg. I often use bags of veg trimmings I sequester in my freezer exactly for this sort of thing.

Fry the pigeon carcasses in the oil until very well browned, then turn down the heat and add the onions, carrots, celery and mushrooms. Cook these until they are softened and browned. Tip the whole lot into your stockpot, deglazing the frying pan with a splash of the red wine or port. Add the remainder of the wine or port with all of the other ingredients plus enough water to cover.

Bring slowly to a bare simmer, keep the pot covered and on your smallest hob on the lowest heat and let it tick away for three hours. Strain, skim and reduce to a volume of 1.8 litres.

For the pigeon reduction:

2 good sprigs of thyme

4 juniper berries, crushed

1 garlic clove, chopped

120ml brandy

120ml port

the reduced pigeon stock

Place all of the ingredients except the reduced stock in a pan and reduce the liquid by three-quarters. Strain through a sieve and add the stock. Cool and keep in the fridge until needed.

For the mustard butter sauce

200g chilled, cubed butter

a small onion, sliced

2 bay leaves

1 star anise

12 black peppercorns

4 cardamom pods, cracked open

4 tbs white wine vinegar

8 tbs white wine

360ml chicken stock

4 tbs cream

salt and white pepper

2 tsp English mustard

Take a knobsworth of butter and gently cooked the onion and herbs and spices gently for around five minutes.

Now, lots of reducing: add the white wine vinegar, turn up the heat, and reduce by three-quarters. Next, add the wine and reduce by three-quarters. Finally add the stock and reduce that by three-quarters too.

Turn the heat down low, stir in the cream and whisk in the remainder of the butter a few pieces at a time. Season with salt and white pepper, strain and stir in the mustard. Pour into a warmed sauce boat or jug.

How to Make a Basic Veal Stock

To me, life without veal stock…is a life not worth living

A while ago, I started up a series of posts on stock-making, and thought I should continue it.

When it comes to stock-making the home cook needs to keep out an eagle-eye for off cuts of meat and bones to sequester in the freezer ready to whip out for a stock. This I always do at Levenshulme Market (of which I am a Director), where the excellent Wintertarn has a stall selling organic cheese and –being good, sustainable dairy farmers – their organic rose veal too. I always have a nosey for any odd bits and I’ve managed to stockpile a few calves’ tails and a calf’s heart, amongst other things.

These sorts of bits are great for making meat stocks – muscle for meaty flavour and bones for gelatinous body.

I thought I would give you my recipe to make a basic veal stock ready for classic soups, stews and sauces. It is the stock favoured in posh restaurants with kitchen run by French chefs, but it is easy to make, and cheap too, if you know where to look. It’s always a good idea to make friends with your local butcher, for this very reason. The reason it is liked so much is that it as there is no dominating flavour as there can be with beef stocks, yet there is plenty of body.

I have written a post already on general stock making, so it might be a good idea to have a look at that if you haven’t made stock very often.

This recipe is guidance really, most quote veal knuckle (the veal equivalent to a pig’s trotter) and veal shin, but you can use any cheap/free bone and muscle combination. You only need to the basic aromatics too – this is a simple, yet elegant stock, of course you can add other vegetables too. Notice there are no peppercorns; if you want a clear stock they need to be avoided as they can make the stock cloudy. If you don’t care, add half a dozen.

1 kg of veal knuckle, split, or tail, or other bones, chopped up

750g shank, or other well-used muscle cut into pieces (heart, tongue, skirt, osso bucco etc.)

2 carrots, peeled and halved lengthways

2 onions, peeled, halved and studded with 2 cloves each

2 sticks of celery, roughly chopped

2 whole garlic cloves

a bouquet garni made up of thyme, parsley stalks, 2 bay leaves

First, get a large pot of water on the boil, and blanche the meat for 5 minutes. This gets rid of the scum, that otherwise would rise to the surface and require skimming. Drain the meat and give it a quick rinse. Place in your stock pot with the vegetables, packing everything in tightly. Pour cold water to just cover, around 2 litres.

Bring to a simmer very slowly, it should take at least 20 minutes. If you do this correctly, you won’t get any more scum rising to the surface.

Once the water is barely gurgling, move the pot onto the smallest hob on your cooker, set at its lowest heat. Keep the pot covered and let it tick over for 5 hours. It may seem like a long time, but it really needs this long slow bathe. It’s not like you have to stand over it. Tip your nets, grout the bathroom or take the dog out or something in the meantime.

Strain the stock through a sieve into a clean pan, bring to boil and reduce by a third. Cool overnight and take away any fat that has solidified on the stock’s surface. You should have a pale coloured jellied stock that can be seasoned and used as required.

If you want a richer brown stock, the bones and vegetables can be browned in the oven first.

Favourite Cook Books no. 2: Good Things by Jane Grigson

This is not a manual of cookery, but a book about enjoying food. Few of the recipes in it will contribute much to the repertoire of those who like to produce dinner for 6 in 30 minutes flat. I think food, its quality, its origins, its preparation, is something to be studied and thought about in the same way as any other aspect of human existence.

Jane Grigson, introduction to Good Things, 1970

Good Things was Jane Grigson second book and was published in 1971. Although she is known for her later extensive and very comprehensive writings, this is relatively brief.

All of Jane Grigson books are wonderful, and this book is no different: logical, creative, witty and sometimes austere, she weaves a tapestry of each ingredient’s culinary potential; and this is why the book is so great, for each chapter focusses upon a single main ingredient. She shows you just how inventive humans can be with a single ingredient and how it should be savoured in its seasonality to be fully appreciated; something we no longer do. This book has spurred me on in my own efforts to be seasonal. Take, for example, the chapter on celery – a vegetable that we generally either add to the stockpot or crunch on in a boring salad – she says:

The fine pleasure of buying celery in earthy heads, after the first improving frosts of winter, is slowly being eroded by the wash of enterprise and aviation. Almost the year round, cleaned and slightly flabby greenish celery…is on sale at inviting prices. It’s the wise cook who averts her eyes from this profuse and plastic display and waits for November. Then crispness and flavour are at their peak …In any case one of the greatest luxuries you can have in Britain today is simple food of the best quality.’

She then goes onto her first recipe which consists of celery stalks, good Normandy butter and sea salt. This is the genius of Good Things, you are being shown how good something can be if prepared properly, grown skilfully and eaten seasonality and sensibly; essentially Jane is teaching us how to eat.

Every chapter also perfectly reflects Jane’s own lifestyle; spending half her time between England and France, with a smattering of recipes from other European countries. It really showed how she lived her life, though I can imagine her family got a little sick of some of the focal ingredients when she was recipe testing.

Sweetbreads: a Jane Grigson – and Neil Buttery – favourite

So what did she pick? Some are probably quite obvious such as venison, asparagus, woodland mushrooms, strawberries and ice creams; others are common and, perhaps, overlooked, like celery, kippers, tomatoes and carrots; whilst some were becoming forgotten or seemed obscure, ones that leap to mind are snails, quince, sweetbreads and fruit liqueurs. Jane’s gift to me is a love of such foods that I never would have sought out, that has demonstrated to me just how good, exciting and varied British food can be, as well as how its history is interlinked inextricably with other countries’ food histories.

I think this recipe best sums up the essence and ethos of Good Things; it uses a delicious but forgotten meat cut, is French but you would think it quintessentially English. She discovered it in the charcuterie of a small town in Burgandy and it was the most expensive pâté in the shop. She made it into a pie, a pie so good it made it on my last Pop-Up Restaurant menu. The recipe requires you prepare some sweetbreads – if you’ve never eaten or prepared sweetbreads, have a look at this previous post all about them. In a nutshell, you poach them briefly in a light chicken or vegetable stock, or court-bouillon. For a post on stock-making click here. I am so self-referential these days! If you can’t get as much as the 500g given in the recipe, then use whatever you can get your hands on. I expect it would be excellent even with the sweetbreads omitted altogether!

I have changed only her Imperial weights and measures so that they are metricated…

For the pastry:

300g plain flour

150g of butter and lard

1 tbs icing sugar

water to bind

For the filling:

500g prepared lambs’ or calves’ sweetbreads

125g mushrooms, roughly chopped

2 tbs onion, finely chopped

1 garlic clove, crushed

75g butter

350g lean pork, or veal and pork mixed

225g hard back pork fat

2 rashers green (i.e. unsmoked) back bacon

2 eggs

heaped tbs flour

125g cream

salt, pepper and thyme.

‘Make the pastry in the usual way’, says Jane. I mean to write a post on pastry-making, I shall endeavour to do so soon. Whilst it rests in the fridge, cut up the sweetbreads into even-sized pieces, then cook the mushrooms onions and garlic in the butter, until softened but not brown. Next, make the forcemeat by mincing the pork and veal, if using, the back fat and the bacon through the course and then fine blades. Mix in the eggs, flour, cream and the mushroom mixture. Season with salt and pepper and add a good sprinkle of chopped thyme.

Line a 450g loaf tin (an old 1 lb tin) with 2 thirds of the pastry. Spread over one third of the mixture over the base of the tin, then a layer of half of the sweetbreads, then a second third of the forcemeat, then the remaining sweetbreads, and lastly the final third of the pork mixture.

Seal the pie with a lid, brush with egg wash and bake for 90 minutes in a moderate oven – around 180⁰C.

‘Serve warm’, she says, but it is also very good at room temperature. It keeps very well in the fridge if wrapped up tightly in foil or clingfilm.

Forgotton Foods #3: Umbilical Cord

I have been writing posts of late on the huge variety of cuts we can get from meat, whether prime cuts or more humble (or should that be umble?) cuts, but I fear I may not be able to cook you all this one!

The umbilical cords of calves born on dairy farms were often collected by thrifty farmers and turned into a dish known as ‘muggety pie’ by famers’ wives. There’s a description of it in the excellent book Food in England by Dorothy Hartley; she says:

The umbilical cord of the calf was washed, soaked in salt water, and cut into short lengths which were then split open end to end twice, and cut, so making small oblong pieces. These were then boiled, till soft, with onions and seasoning, chopped again and made into a pie, using the gelatinous stock and some milk to make the filling gravy. The whole white pie was then covered with crust and baked.

Muggety pie was popular in the West Country, particularly in Gloucestershire and Cornwall, “all jelly soft it was…it was the jelly gravy was the best part – some did put taters and a turnip and sech, but ‘twas best plain, and good cold,” told old farm-hand.

Foods like muggety pie are dishes that probably never travelled much further than the dairy or cattle farmers’ houses and quickly forgotten. It was borne out of a necessity that no longer exists, but why kill an animal for meat that can be sold on when there is good protein laying there in the hay?

So, if there are any diary or cattle farmers that have a spare umbilical cord or two hanging around, let me know and I’ll bake you a delicious pie!

Don’t worry though, you don’t have to miss out on muggety pie because it can also be made out of sheep’s intestines or a sheep’s pluck (i.e. lungs, heart and liver) that latter of which should easily be found at butchers given a little notice…

Have a Heart?

I am aiming to write at least one recipe on every cut of meat, cheap or expensive, regular or odd (see here for the main post). At Levenshulme Market a few months ago, I came across a calf’s heart at the dairy farm Wintertarn’s stall, so I bought it and stole it away in my freezer until I found a recipe I wanted to try.

Heart crops up in many recipes such as pork faggots or haggis, but these days is rarely eaten as a cut of meat in its own right. In the war-time home stuffed pig’s or lamb’s hearts were pretty popular because offal cuts were not rationed. This naturally has damaged the reputation of the heart as something that is good eating. Prior to the 20th century, heart was a very popular cut of meat, even with the middle and upper classes. I like this recipe that appears in Elizabeth Raffald’s book The Experienced English Housekeeper (1769) ‘To make a Mock Hare of a Beast’s Heart’:

Wash a large beast’s heart clean and cut off the deaf ears [see below], and stuff it with forcemeat…Lay a caul of veal…over the top to keep in the stuffing. Roast it either in a cradle spit or hanging one, it will take an hour and a half before a good fire; baste it with red wine. When roasted take the wine out of the dripping pan and skim off the fat and add a glass more of wine. When it is hot put in some lumps of redcurrant jelly and pour it in the dish. Serve it up and send in redcurrant jelly cut in slices on a saucer.

I think this sounds like a delicious recipe to try, and perhaps I will when I come across a large beast’s heart in the butcher’s shop window. However, it might be a little bit of a challenge for someone not used to eating such things. Instead, I give a recipe for a delicious and simple marinated calf’s heart, as a good introduction to the texture of heart which is not as tough as old boots as you may first expect, but firm and has the familiar taste of meat.  However, before you cook a heart, you need to know how to get it ready.

Preparing Heart

The hearts of small animals such as ducks and chickens can simply have any large blood vessels removed and you are done.

Preparing a larger heart such as calf, ox, lamb or pig might appear to be a little daunting at first, but it is really quite simple. First of all the large blood vessels as well as the two large flaps that used to be known as ‘deaf ears’ are trimmed away from the top of the heart as well as any obviously sinewy parts. This should leave the heart looking neat with two cavities within. If you want, trim away the fat, but if it is to be roasted, the fat provides a natural basting. In fact, there is so little fat within the heart itself that often it needs to be larded with strips of fatty bacon. Large ox hearts are often quartered and frozen away to be used over several meals.

Pop the heart in some salted water until you are going to cook it.

Grilled & Marinated Calf’s Heart

This recipe is a modern one and it comes from the Nose-to-Tail chef Fergus Henderson. It is very simple and very healthy – pieces of calf’s heart that have been marinated in Balsamic vinegar, quickly griddled then served up with a nice salad.

For four

Ingredients

1 calf’s heart

around 6 tbs Balsamic vinegar

salt

pepper

1 tbs chopped fresh thyme

First of all prepare the heart: trim it as explained above and remove any thicker pieces of fat. In this case, the heart is cooked quickly, so it doesn’t require the fatty basting. Cut it open and lay it out flat and cut into 2 or 3 centimetre (1 inch) squares.

You need each piece of meat to be about half a centimetre (¼ of an inch) thick, so some very thick parts, such as the ventricles, will need to be sliced horizontally. Tumble the pieces of heart into a bowl along with the vinegar, salt, pepper and thyme, making sure everything gets coated well. Cover and marinate for 24 hours.

To cook the meat, you need a red-hot griddle – either on a barbeque or over a hob – that has been lightly greased with some rapeseed oil. Place pieces of heart on the griddle and turn after 2 or 3 minutes and cook the same time on the other side.

Serve straight-away with ‘a spirited salad of your choice’, says Mr Henderson, ‘e.g. waterctress, shallot and bean, or raw leek.’
