I have been meaning to write a post on this excellent cookbook for quite a while, and it is such a shame that my prompt to pull my finger out was the sad and untimely death of Gary Rhodes at the end of last year.
When I was asked to submit my list of favourite cookbooks to the 1000 Cookbooks project, I put New British Classics as my number one choice, my comment at the time being: “simply the best book on British food around. Everything from lowly haslet to lobster.”
Favourite recipes include salad cream, lardy cake, prawn cocktail, rhubarb and rack-on-black – lamb roasted with black pudding.
My favourite books on food tend to be by food writers rather than professional chefs because they write about their love of food and its importance in our culture and history. Chefs tend to be, well, cheffy; there’s no evocative description of the hustle and bustle of a French market, and they assume that you want to be cooking restaurant-level food at home. This is where Rhodes was different – sure there are cheffy dishes like the very complex rich pigeon faggot – but there are basics such as fried bread, porridge and jam roly-poly. Everything is represented and everything has equal billing, meaning that whatever your ability level there is a way in. You can start off with basics like scrambled eggs or go straight in at the deep end with pigs’ trotters Bourguignonne.
The full gamut of British food is here: fish and chips, steak and kidney pie, pork faggots, white pudding, Welsh rarebit, and the massive range of techniques contained within makes it the most comprehensive book of British recipes there is. What’s more, every single recipe works perfectly; he goes through every stage, assuming you know nothing but never patronises. If you don’t own a copy and you’re interested in cooking British food, it really is essential.
The secret to his success was his attention to detail. Every move made, and technique used was meticulous and done with deftness, even the way he picked up an ingredient to show to camera had an air of precision about it. Take a look at this clip from the accompanying BBC programme, where he shows us how to make cabbage and bacon soup, and you’ll see what I mean:
He was a classically trained chef who applied French techniques to classic British dishes, taking them to new heights while keeping them authentic. His approach definitely rubbed off on me when I was teaching myself to cook; use the best ingredients and don’t cut corners, every stage is there for a reason, so you need to understand why it is there. Only when that penny drops will you develop a cook’s intuition. This approach to cooking won him his first Michelin star at the age of 26, eventually receiving an OBE for services to the hospitality industry in 2006.
On television, he was very enthusiastic, polite and well-spoken; he seemed a little odd and socially awkward (as all the best people are), making him all the more endearing. He got me interested in cooking and wanting to spend my precious leisure time in the kitchen, learning new techniques and tackling novel ingredients.
He was rarely off the telly during the late 1900s and early 2000s, his trademark spiky hair and over-enthusiasm caused many to pooh-pooh him as gimmicky. Eventually the fickle eye of entertainment focused upon other, younger chefs and so he stopped appearing so regularly. But his books and their accompanying TV shows are great; his Rhodes Around Britain and Cookery Year series are worth checking out too (his apple pie recipe from the latter is the best in world in my opinion).
He died on the 26 November 2019 at the age of 59 from head injuries after a fall – no way or age to go, I’m sure you’ll agree. Of course, when someone dies, there work is revaluated and I hope people recognise what he did for British cuisine, because he put it on a pedestal when everyone else was looking elsewhere.
He was ‘discovered’ on the Keith Floyd programme Floyd on Britain & Ireland. On the segment he makes his signature dish: braised oxtails. Ironically, by the time New British Classics was published his most famous dish was illegal to eat – cooking beef on the bone was banned because of health fears surrounding the BSE crisis. Eventually the ban was lifted, and I could make it for myself. Back in my pop-up restaurant days it was the main course at my first everOdd Bits offal evening.
This is my version of Gary’s signature dish; it’s slightly simplified but just as gutsy. It really is one of the most delicious things you will ever cook. Nothing else needs to be said – except ‘cook it’!
Enough for 6
2 oxtails, trimmed of excess fat
Salt and pepper
Around 100 g each carrot, onion, celery and leek
1 tin of chopped tomatoes
2 tbs tomato purée
Small bunch thyme and rosemary
2 bay leaves
1 clove garlic, crushed
300ml red wine
1 litre beef stock
Season the oxtails and fry in dripping until well browned, transfer to an ovenproof pot, then fry the vegetables until nicely brown too. Tip those into the pot along with the tomatoes, garlic and herbs and bring to a simmer. Pour the wine into the original pan and reduce until almost dry. Add to the pot with the stock.
Simmer very gently on the hob or braise in an oven set to 160⁰C. Whichever you choose, it needs to tick away for 3 hours.
Remove the cooked meat and keep warm and pass the cooking liquor through a conical strainer, really pressing the vegetables hard to get all the flavour out.
Throw in a big handful of ice cubes, and stir so they freeze the fat; you should be able to lift out ice and fat in one nice big satisfying lump.
Reduce the liquor to a sauce and season with more salt and pepper, then add back the oxtails to heat through.
As promised in my previous post, a few recipes from the Forme of Cury. I have translated them into modern English, so you can follow them a bit easier. For the hippocras drink, I have given you my interpretation of the recipe as there are some hard-to-find ingredients. All the recipes are easy to make and taste delicious.
A very simple dish – not everything Richard II ate was ostentatious. This is a very simple recipe with ingredients we use today. The addition of the saffron give it an interesting earthy flavour. Powder douce was a mixture of sweet spices – the spices we would associate with desserts like apple pie – shop-bought mixed spice is good substitute. The base of the soup is broth or stock, use any you like, though I think chicken is the best for this soup.
Caboches in Potage. Take Caboches and quarter hem and seeth hem in gode broth with Oynouns yminced and the whyte of Lekes yslyt and ycorue smale. And do þerto safroun & salt, and force it with powdour douce.
Cabbage Soup. Take cabbages and quarter them and seethe (simmer) them in good broth with chopped onions and the white of leeks, slit and diced small. Add saffron and salt, and season it with powder douce.

Rabbit or Kid in a Sweet and Sour Sauce
Any kind of meat can be used here really, chicken legs or diced lamb are the best substitutes. Sweet and sour sauce was called egurdouce; -douce meaning sweet and egur- meaning sour, e.g. vin-egur was sour wine, in other words vinegar! The meat is browned in lard, removed, so the onions and dried fruit can be fried, the meat is replaced with the liquid ingredients and spices and simmered just like a modern casserole or stew.
Egurdouce. Take connynges or kydde, and smyte hem on pecys rawe, and fry hem in white grece. Take raysouns of coraunce and fry hem. Take oynouns, perboile hem and hewe them small and fry them. Take rede wyne and a lytel vynegur, sugur with powdour of pepr, of ginger, of canel, salt; and cast þerto, and lat it seeþ with a gode quantite of white grece, & serue it forth.
Take young rabbits or kid and cut them into pieces and fry them in lard. Take currants and fry them. Take onions, parboil them, and chop them small and fry them. Take red wine and red wine vinegar, sugar and powdered pepper, ginger, cinnamon, salt and add them, let it simmer gently in a good quantity of lard and serve it forth.

This is a really excellent recipe for spiced wine; mulled drinks were drunk throughout the year and could be served hot or cold. There are some tricky to get hold of spices, but I’ve added alternatives where appropriate. If you have to omit a spice or two, don’t worry, it will still be delicious.
Pur fait ypocras. Troys vnces de canell & iii vneces de gyngeuer; spykenard de Spayn, le pays dun denerer; garyngale, clowes gylofre, poeure long, noieȝ mugadeȝ, maȝioȝame, cardemonii, de chescun dm. vnce; de toutes soit fsait powdour &c.
To make hippocras. Three ounces of cinnamon and three ounces of ginger, spikenard of Spain, a pennysworth; galingale, cloves, long pepper, nutmeg, marjoram, cardamom, of each a quarter of an ounce; grain of paradise, flour of cinnamon, of each half an ounce; of all, powder is to be made etc.
There are a couple of tricky spices in the list: long pepper and grains of paradise are available to buy online quite easily, but are very expensive, so you can get away with regular black pepper as a substitute. Galangal is easier to find fresh than dried these days, as it is used extensively in Thai cuisine as part of their delicious red and green curries, however, seek and ye shall find the dried variety.
Spikenard of Spain is the extract of the root of a valerian plant and was used in the church as an anointing oil, it also appears very commonly in recipes. I’ve never had the opportunity to taste it.
Here’s my version of the recipe:
1 bottle of red wine
1 tsp each ground cinnamon and ground ginger
¼ tsp each ground galingale, ground black pepper, ground nutmeg, dried marjoram, ground cardamom
honey to taste
Pour the wine into a saucepan with all of the spices and bring slowly to a scalding temperature. Don’t let the wine boil as there’ll be no alcohol left in it! Let the spices steep in the hot wine for around 10 minutes.
Meanwhile spread a piece of muslin, or any other suitable cloth, over a sieve and pour the spiced wine through it into another pan or serving jug. Add honey to sweeten. Serve hot or cold.

The Forme of Cury (literally, A Method of Cookery) is Britain’s earliest known cook book, dating from around 1390. Regular readers will know, I am somewhat of a mediaevalist and so I have leafed through this ancient text many times, slowly soaking up the recipes just like a sop in potage.
The effort required to produce the food, prepare it an obtain the ingredients, the surroundings and equipment and the wonderment of a mediaeval feast are all there to see, but from one person’s perspective: the cook.

By cooking recipes from books like this, we get a glimpse of a bygone world, and with a bit of knowledge about the ingredients and methods used to prepare them, you get to experience history almost at first hand and really fires up the imagination. Anyone with as passing interest in history will love giving recipes like this as go, and I implore you to try, whether it be this book, or something more accessible like Mrs Beeton’s Book of Houshold Management, you won’t be disappointed.
Of course, for the Forme of Cury you have to brush up on your Middle English – this is the language of Chaucer – but with a good glossary and some persistence, you will tune in.
The Forme of Cury begins thus:
The Forme of Cury was compiled of the chef maister cooks of kyng Richard the Secunde king of Englond aftir the Conquest.
Richard II, the Dandy King, was flamboyant and ostentatious; he lived in grandeur and was considered to be a narcissistic, effeminate fop by many. Everything was done on a grand scale. His court and household were huge: 200 personal guards, 13 bishops, barons, knights, esquires plus many servants and other workers. In all, around 10 000 people worked under him.
Richard’s feasting and partying were also elaborate – one feast in 1383 cost 57 000 pounds plus an extra 10 000 pounds for napery and spices! If he were alive he’d be called a foodie for sure, his other gift to gastronomy aside from this book, being the napkin, prior to that the tablecloth doubled as one.
Richard was also obsessed with record-keeping, and because of this he commissioned this manuscript, and history is all the much richer for it.
Who wrote it?
The master cooks will not have written the recipes down themselves, it’s very likely that they were illerate, but they will have been dictated to by a scribe who sat behind the master cook taking notes. The cook himself sat in a raised chair in the centre of the huge kitchen, filled with industrious workers such as the bakers, the sauce cook, the spit-roaster, and the mincer; there was even a person in charge of salad! From his chair he was lord of all he surveyed, checking every dish before it was ‘served forth’.
There are ten incomplete copies of the Forme of Cury in existence today, but the original 1390 document seems to be forever lost. The most complete copy is a six-metre long scroll of vellum parchment which is housed in the British Museum. No extant copy matches up exactly and all appear to contain errors or omissions (and in some cases additions). These differences are mainly due to human error by copying – some scribes were better than others it seems – but some are purposeful, new recipes unique to the commissioning household could be added, and some removed if disliked.

These manuscripts were transcribed and published as printed documents several centuries later many containing further errors, but they are invaluable because the text is easier to read, and many were written before some of the original copies degenerated, becoming unreadable. Some errors were mistranslations, for example ‘cast’ being swapped for ‘yeast’ (which was then spelt ȝast); other mistakes were made because non-cooks were doing the translating. In one case one transcriber recommends pouring boiling hot water over an intricately constructed pastry castle – not a good idea!
Modern editions of the book start with a list of recipes, and such a breadth of dishes is represented. Some are homely, many are ostentatious, others mysterious. There are some familiar names and ingredients: blancmange, custard tart, soups and stews, gruel and frumenty and hippocras (spiced wine), all of which would go down well at a dinner party today. However, I’m not sure if porpoise in frumenty or piglets in sage sauce would be well-received.

On feast days there was a type of dish called a sotielty (subtlety) which was not eaten, just looked at. Examples include the aforementioned pastry castle; the cokagrys, a half-pig, half-cock creation, and animals on pilgrimage, dressed in clothes and holding lamprey staffs.
The food that was eaten, however, was similarly painstaking to produce. To show of Richard’s great wealth there would be liberal use of spices and sugar (which was then considered a spice) as well as dried fruits such as currants, which had to have their seeds individually removed before they could be used – there was no such thing as seedless grapes in the 14th Century!
There were more fast days then feast days however, so there are many vegetarian and vegan dishes as well as recipes using freshwater fish and almonds or almond milk.
Some recipes are familiar and are delicious (they made great custard tarts), there are early recipes for rice pudding, bread sauce and meatballs. They even made pasta, which was most often rolled out thinly, cut into diamonds and dried. The pasta would be layered up with cooked mincemeat and a cheese sauce: in other words, a mediaeval English lasagne!
Food from The Forme of Cury has appeared on the blog before (see the Tartlettes post) and I made eel pie and hippocras for Alice Roberts on Channel 4’s Britain’s Most Historic Towns. I’ve waffled on a bit so I’ll post some original recipes as well as my interpretations of them in the next few days.
This is not a manual of cookery, but a book about enjoying food. Few of the recipes in it will contribute much to the repertoire of those who like to produce dinner for 6 in 30 minutes flat. I think food, its quality, its origins, its preparation, is something to be studied and thought about in the same way as any other aspect of human existence.
Jane Grigson, introduction to Good Things, 1970
Good Things was Jane Grigson second book and was published in 1971. Although she is known for her later extensive and very comprehensive writings, this is relatively brief.
All of Jane Grigson books are wonderful, and this book is no different: logical, creative, witty and sometimes austere, she weaves a tapestry of each ingredient’s culinary potential; and this is why the book is so great, for each chapter focusses upon a single main ingredient. She shows you just how inventive humans can be with a single ingredient and how it should be savoured in its seasonality to be fully appreciated; something we no longer do. This book has spurred me on in my own efforts to be seasonal. Take, for example, the chapter on celery – a vegetable that we generally either add to the stockpot or crunch on in a boring salad – she says:
The fine pleasure of buying celery in earthy heads, after the first improving frosts of winter, is slowly being eroded by the wash of enterprise and aviation. Almost the year round, cleaned and slightly flabby greenish celery…is on sale at inviting prices. It’s the wise cook who averts her eyes from this profuse and plastic display and waits for November. Then crispness and flavour are at their peak …In any case one of the greatest luxuries you can have in Britain today is simple food of the best quality.’
She then goes onto her first recipe which consists of celery stalks, good Normandy butter and sea salt. This is the genius of Good Things, you are being shown how good something can be if prepared properly, grown skilfully and eaten seasonality and sensibly; essentially Jane is teaching us how to eat.

Every chapter also perfectly reflects Jane’s own lifestyle; spending half her time between England and France, with a smattering of recipes from other European countries. It really showed how she lived her life, though I can imagine her family got a little sick of some of the focal ingredients when she was recipe testing.
Sweetbreads: a Jane Grigson – and Neil Buttery – favourite
So what did she pick? Some are probably quite obvious such as venison, asparagus, woodland mushrooms, strawberries and ice creams; others are common and, perhaps, overlooked, like celery, kippers, tomatoes and carrots; whilst some were becoming forgotten or seemed obscure, ones that leap to mind are snails, quince, sweetbreads and fruit liqueurs. Jane’s gift to me is a love of such foods that I never would have sought out, that has demonstrated to me just how good, exciting and varied British food can be, as well as how its history is interlinked inextricably with other countries’ food histories.
I think this recipe best sums up the essence and ethos of Good Things; it uses a delicious but forgotten meat cut, is French but you would think it quintessentially English. She discovered it in the charcuterie of a small town in Burgandy and it was the most expensive pâté in the shop. She made it into a pie, a pie so good it made it on my last Pop-Up Restaurant menu. The recipe requires you prepare some sweetbreads – if you’ve never eaten or prepared sweetbreads, have a look at this previous post all about them. In a nutshell, you poach them briefly in a light chicken or vegetable stock, or court-bouillon. For a post on stock-making click here. I am so self-referential these days! If you can’t get as much as the 500g given in the recipe, then use whatever you can get your hands on. I expect it would be excellent even with the sweetbreads omitted altogether!
I have changed only her Imperial weights and measures so that they are metricated…
For the pastry:
300g plain flour
150g of butter and lard
1 tbs icing sugar
water to bind
For the filling:
500g prepared lambs’ or calves’ sweetbreads
125g mushrooms, roughly chopped
2 tbs onion, finely chopped
1 garlic clove, crushed
350g lean pork, or veal and pork mixed
225g hard back pork fat
2 rashers green (i.e. unsmoked) back bacon
heaped tbs flour
salt, pepper and thyme.
‘Make the pastry in the usual way’, says Jane. I mean to write a post on pastry-making, I shall endeavour to do so soon. Whilst it rests in the fridge, cut up the sweetbreads into even-sized pieces, then cook the mushrooms onions and garlic in the butter, until softened but not brown. Next, make the forcemeat by mincing the pork and veal, if using, the back fat and the bacon through the course and then fine blades. Mix in the eggs, flour, cream and the mushroom mixture. Season with salt and pepper and add a good sprinkle of chopped thyme.
Line a 450g loaf tin (an old 1 lb tin) with 2 thirds of the pastry. Spread over one third of the mixture over the base of the tin, then a layer of half of the sweetbreads, then a second third of the forcemeat, then the remaining sweetbreads, and lastly the final third of the pork mixture.
Seal the pie with a lid, brush with egg wash and bake for 90 minutes in a moderate oven – around 180⁰C.
‘Serve warm’, she says, but it is also very good at room temperature. It keeps very well in the fridge if wrapped up tightly in foil or clingfilm.
I thought I would start a series of posts on the cook books – and books of cookery writing – that I think are the best out there. I end the post with my favourite recipe from the book – Butter Tarts.
So many of you might be thinking, why the heck is the first one up Home Recipes with Be-Ro (or as it is known to me, The Be-Ro Book)? Well it is this book that got me into cookery in the first place because it was the one my Mum used when I was growing up. Before I was even thought of my Mum owned a bakery and so we had the luxury of having most things baked or cooked from scratch. This was the go-to book for all the family staples, and when I was off school on holiday and it was raining outside she would entertain me and my brother by giving us pastry trimmings to cut out. As we got older we chose recipes from The Be-Ro Book and cooked them with help from Mum. So I was essentially brought up on this book and its recipes, and it is certainly where I got my enthusiasm for cooking; I have been conditioned to feel at home in the kitchen.
The copy I have is the Centenary Edition, though it doesn’t say anywhere in the book when in was printed. I know that the Be-Ro Flour Company was formed in the 1880s, so it dates the book to the 1980s. My Mum has an even older copy this one, though the recipes are identical. Be-Ro still makes flour and Be-Ro recipe books are still printed today, these days of course you can go onto the Be-Ro website you will find the same recipes, which haven’t changed.
Well almost; the main difference between my copy of The Be-Ro Book and the modern version is that it suffers rather from a post-war rationing complex – most recipes ask for margarine rather than butter. Luckily shortbread escapes this, but buttercream does not. In fact there’s a lot of nasty margarine-based buttercream.
You are forgiven for not holding this book in as high esteem as I do, yet the classics are here, and they bring back great childhood memories. I also have to say it has really good basic skills teaching too, so don’t underrate it.
Many of the recipes are coming back into fashion, especially now that budgets are a little less flexible and the weather is cold and wet. Personal favourites of mine include a really excellent moist and light milk chocolate cake; its secret is the inclusion of evaporated milk and my Mum still bakes it. The steamed sponge puddings are excellent too as are the many tea loaves. It does fail on a terrible recipe for flapjacks that uses cornflakes instead of oats. You can’t win them all though, can you?
In my opinion these butter tarts are the best things in this book, though I have made a few changes to the original recipe. The filling is a mixture of raisins in a sweet caramel sauce that forms a delicious chewy crust as it bakes.
This recipe makes 12 butter tarts.
shortcrust pastry made with 8 oz flour and 4 oz of butter (or butter and lard)
1 oz butter
2 oz caster sugar
2 oz soft dark brown sugar
4 oz raisins
a few drops of vanilla extract
Roll out the pastry thinly and cut out circles using a pastry cutter measuring 3 ½ inches in diameter and line a steep-sided patty pan tray. You can use a tart tin, but I find you can’t get enough of the filling in.
Melt the butter in a saucepan, take off the heat and stir in the remaining ingredients. Add 2 teaspoons of mixture per tray – this should be just enough for 12 tarts.
Bake for 15-20 minutes at 200⁰C (400⁰F) and cool on a wire rack.
