Manchets and Payndemayn

As I mentioned last post, I used Elizabeth David’s research on the medieval and early modern bread roll called payndemayn (medieval period) or manchet (medieval and early modern), to recreate my own. The two words at one point, it seems, were interchangeable. There are many spellings of payndemayn, the root of this word being French, pain demesne, from the Latin panum dominicum, the lord’s bread.[1] The word appears in medieval manuscripts such as Forme of Cury. Manchet is believed to be a contraction of the word payndemayn – main – and cheat, the name for another, similar bread made from refined flour that wasn’t quite as white as the really good stuff. Main and cheat eventually became manchet.[2]

It was ‘the lord’s bread’ because the small bread rolls – weighing in at around only 7 ounces (200 grams) – were so expensive that only the lord, at the head of the top table, would receive one. The small loaf would be cut by the lord’s server as described here in the Boke of Keruynge (the Book of Carving) written in 1513:

take a lofe in your lyfte hand. & pare y lofe rounde aboute / than cut the over cruste to your souverayne, and cut the nether crust, & voyde the parynge, & touch the lofe no more after it is so served.[3]

The over crust, being considered the best part was eaten by the lord, and the rest divided up and given to whomever he so pleased. This is the origin of the idiom the upper crust we sometimes use when referring to the upper classes.

There are mentions of this bread all over, but there are no real recipes in the Middle Ages. There are several mentions of these loaves in recipes though, take this recipe for ‘Soppes Dorre’ from fifteenth century manuscript Harl.4016 (c.1430):

…take a paynmain, And kut him and tost him, And wete him in wyne, And ley hem in a dish, and caste [almond flavoured] syrup thereon.[4]

Elizabeth David went to great lengths in writing English Bread and Yeast Cookery to try and get an idea of what these breads were really like, gleaning cues from several sources and combining them. The earliest decent recipes and descriptions crop up in the late sixteenth and early seventeenth centuries, but there are no complete ones: sometimes the ingredients are listed, but the amounts or the shape of the loaves are not given; other times, the shaping is described but the ingredients are missing. She also used artwork from the era to work out the likely shapes.

It seems that they were also enriched with milk and/or butter and/or eggs, or none of the above, so perhaps something rather like a brioche (sometimes). Elizabeth took the information and created a flour mix of plain white flour, with some strong white flour and a little wholemeal flour, to replicate the lower gluten, not-quite-white nature of the wheat flour used at the time. She enriched her dough with butter and milk, avoiding egg. It put me in mind of my recipe for Cornish/Devonshire splits. She liked that in some descriptions the loaves were oval in shape. To replicate this, she made a deep slash in the dough before it went into the oven. However, I much preferred the sound of Gervase Markham’s 1623 way of shaping his loaves. He instructs us to take the risen dough and

mold it into manchets, round, and flat, scotch [cut] about the wast to give it leave to rise, and prick it with your knife in the top, and so put it into the Oven, and bake it with a gentle heat.[5]

I used my Devonshire splits dough as the basis of my manchet recipe, which, as it turned out, was pleasingly very close to Elizabeth’s, except – of course – I used much less salt than she. I decided to make some in the oval shape preferred by Elizabeth, and some like those described by Gervase Markham.

Samuel Pepys Buries His Parmesan

Early in the morning of Tuesday 4 September 1666 the great diarist and raconteur Samuel Pepys was rudely woken by a servant telling him to get up and get out of his house because a fire, which had started two days prior on Pudding Lane* in the City of London, was fast approaching his home on Tower Hill. The Great Fire of London was well underway. What would you do in this situation? Well Pepys told his servant to go away (or words to that effect), turned over, farted (probably) and went straight back to sleep.1

Things obviously took a while to sink in and he realised later a catastrophe was afoot. According to his diary entry for the day he was ‘[u]p by break of day [we can that with a pinch of salt] to get away the remainder of my things; which I did by a lighter at the Iron gate and my hands so few, that it was the afternoon before we could get them all away.’2

Pepys lived on Seething Lane and was a naval administrator and lived close to several other navy chums near to the Tower of London, so they really were in the thick of it. He tells us in detail what he saw and what he and his friends did:

Sir W. Pen [this is Admiral William Pen, Commissioner of the Navy Board] and I to Tower-streete, and there met the fire burning three or four doors beyond Mr. [Richard] Howell’s, whose goods, poor man, his trayes, and dishes, shovells, &c., were flung all along Tower-street in the kennels, and people working therewith from one end to the other…’2

He managed to get the majority of his belongings to Bethnal Green and safety, but not everything.1 Left with little time, and perhaps no horses and carts either, snap decisions had to be made:

the fire [was] coming on…both sides, with infinite fury. Sir W. Batten [Master of Trinity House which specialised in all things naval] not knowing how to remove his wine, did dig a pit in the garden, and laid it in there; and I took the opportunity of laying all the papers of my office that I could not otherwise dispose of. And in the evening Sir W. Pen and I did dig another, and put our wine in it; and I my Parmazan cheese, as well as my wine and some other things.2

But – you may be thinking – if he was taking plenty of belongings, surely he could make room for some wine and cheese? One issue was size: the wine would have been in barrels, not bottles, and the Parmesan cheese – if a full round – could have weighed 40 kilos or more. But – you may also be thinking – these are just food items, why risk hanging about the inferno just to save them? Was he that greedy!? Well, in part, yes – he certainly liked his food, and he relished writing about the food he ate, and the booze, coffee, tea and chocolate he drank. His diaries are essential reading for the food historian for this very reason. Mainly it was because they were very expensive and a great status symbol, so it wasn’t all about not wasting good food. No doubt he shed a tear as he shovelled it over with clods of earth.

Parmesan cheese was a particularly sought after food and was commonly part of diplomatic gifts. For example, in 1511 Pope Julius II gave Henry VIII 100 rounds of Parmesan cheese for helping him fight the French3 (yes, there was a time the English Crown and the Catholic Church got on!). Parmesan, then, was perfect for the greedy aristocrat or great gourmand in your life.

He dined that evening with friends in Woolwich, and from their house he could see the blaze rampaging through the city:

Only now and then walking into the garden, and saw how horridly the sky looks, all on a fire in the night, was enough to put us out of our wits; and, indeed, it was extremely dreadful, for it looks just as if it was at us; and the whole heaven on fire. I after supper walked in the darke down to Tower-streete, and there saw it all on fire… the fire is got so far that way, and all the Old Bayly, and was running down to Fleete-streete; and [Saint] Paul’s is burned, and all Cheapside. I wrote to my father this night, but the post-house being burned, the letter could not go.2

The Great Fire would go on to decimate four-fifths of the city, destroying over 13 200 homes, 87 parish churches, as well as several important and iconic buildings such as the Royal Exchange. Pepys’ home was destroyed.1

The Parmesan cheese was never recovered and who knows, it could still be there, waiting to be found…

Pie-Style Pressure Cooker Pigeon

Last post I told you all about the origins of the pressure cooker, and how it was invented by Frenchman Denis Papin in the seventeenth century. One part of his story really struck a chord with me, and that was an almost throwaway comment made by diarist John Evelyn. He attended the ‘philosophical supper’ where Papin cooked for the members of the Royal Society, everything pressure-cooked in his “Digester”. Evelyn wrote about in his diary and described how deliciously tender everything was, but noted that the pigeons were particularly delicious:

We ate pike and other fish, bones and all, without impediment; but nothing exceeded the pigeons, which tasted just as if baked in a pie, all these being stewed in their own juice, without any addition of water save what swam about the digestor

As soon as read that, I knew I had to try it.

I don’t know what your mind conjures up when you imagine what a pigeon pie was like in days of yore, but I always think of Dorothy Hartley’s illustration and description in her wonderful book Food in England. Hers has a double crust and a layer of suet dumpling dough inside, but it was the interior of the pie that I was interested in here.

After a pie dish is lined with the pastry, a slice of braising steak is laid inside with the pigeons on top, then there is a sprinkling of bacon pieces and mushrooms. Stock or gravy is poured over them before the dumpling layer and second pastry layer are added on top. This recipe is for old pigeons that require long cooking, but if young pigeons (squabs) were used, the pies were cooked quickly and at a high temperature, the shortcrust pastry swapped for flaky or puff pastry and the stewing steak swapped for sirloin or veal. There is no definitive recipe, and there are recipes for pigeon pie from the seventeenth century that contain oysters, bone marrow, pistachio nuts and cockerels’ stones (testes). However they are cooked, pigeon pies were well regarded because of their tenderness.

In my interpretation of pie-style pressure cooker pigeon, I stuck quite closely to Hartley’s description, though I added a few aromatic herbs and vegetables and good glug of red wine. I heartily recommend it, and the pigeons do come out exceedingly tender:

Serves 4

1 good knob of butter or bacon fat, around 30 g

4 cloves of garlic

1 leek, trimmed and sliced

2 sticks of celery, chopped

3 bay leaves

12 sprigs thyme

2 portobello mushrooms, sliced

Salt and pepper

2 tbs plain flour

6 rashers dry cured streaky bacon (smoked or unsmoked)

2 oven ready woodpigeons

400 g piece of braising steak (I used top rib)

125 ml red wine

250 ml beef stock

2 tbs chopped parsley

Melt the butter or fat over a medium high heat and add the garlic, leek and celery. Tie the bay leaves and thyme with some string and toss into the mixture. Season well with salt and pepper. Fry and brown the vegetables for around 10 minutes, stirring occasionally. Add the mushrooms and fry for a further 5 minutes.

Meanwhile season the flour and scatter it over a plate. Give the steak a good coating of seasoned flour by pressing it down so that it gets a good covering of flour: make sure you do both sides.

Lay out 3 bacon rashers side by side on a board, sit a pigeon at one end and roll up, tucking the rashers underneath. Repeat with the other pigeon.

Take the pan off the heat, sit the beef on top of the vegetables, sprinkling in any flour that refused the stick to the beef. Sit the pigeons on top and pour over the wine and stock. The liquid should cover the beef, but only go up around a third of the pigeons. Add more stock – or plain water – if necessary. Add the parsley and then close the pressure cooker lid.

Bring up to full pressure and then turn down to a quiet hiss for 1 hour. Turn the heat off and allow to cool enough so that the lid can be removed safely.

To serve, remove the pigeons from the cooker, take off the bacon and return it to the vegetables, then remove the pigeon breasts – you should be able to do this with a spoon – and divide the beef into four pieces.

Just look how clean the meat comes from the bone. Deliciousness.

Mash the very soft bacon into the vegetables. Place a piece of beef in the centre of a plate or deep bowl, sit a pigeon breast on top and spoon over the vegetables and gravy.

Serve with mashed potatoes and garden peas.

Smoking Bishop

I spent part of the week in London this week and made sure I had a wander around the Tower Bridge area, my favourite part of the great city. The tiny roads are still so very evocative of Dickens with many of the street names and yards appearing in his writings. Much of Little Dorrit takes place in this area of London, but it was such a bitingly-cold day that it put me more in mind of the winter scenes described in Dickens’ novella A Christmas Carol.

At the very end of the story, when it dawns upon the old miser Ebenezer Scrooge that it’s nice to be nice, he offers his long-suffering clerk a well-deserved pay rise and some delicious steaming-hot smoking bishop:

“A merry Christmas, Bob!” said Scrooge, with an earnestness that could not be mistaken, as he clapped him on the back. “A merrier Christmas Bob, my good fellow, than I have given you, for many a year! I’ll raise your salary, and endeavour to assist your struggling family, and we will discuss your affairs this very afternoon, over a Christmas bowl of smoking bishop, Bob! Make up the fires, and buy another coal-scuttle before you dot another i, Bob Cratchit!”

Christmas wouldn’t be Christmas without a heady hot boozy snifter and smoking bishop is the best of all, in my opinion. Everyone is sick of mulled wine these days – or at least I am – this is the way to go; a marvellous mixture of port, oranges and spices.

The drink is smoking because the oranges – preferably bitter Seville oranges – are roasted until blackened. The drink is a bishop because it is one of several drinks once known as ‘ecclesiasticals’; drinks named after various orders within the Catholic church. Indeed, if you substitute the port for claret, you have a smoking cardinal; better still, use champagne and you’ve got yourself a smoking pope! I have never tried these, but I think I might give smoking pope a go but using Prosecco instead. There was a spate of these somewhat anti-Catholic snifters during the 17th and 18th centuries, but it was just a wry dig, compared to what had happened in the past (e.g. this post). If you look up the recipe for a smoking bishop in Eliza Action’s classic 1845 book Modern Cookery for Private Families, inset is an illustration of a mitre-shaped punch bowl into which it should be served!

Many port drinks were created around this time too because France and England were tied into an out-of-control tit-for-tat game with tariffs for exports between the two countries, making French wine – the preferred drink at the time – too expensive for most people, and so eyes moved to Spain and it was soon Cheerio! Chateau Neuf de Pape and Hello! lovely port wine.

One of the reasons I don’t always like mulled wine is that it can be a little heavy on the spices. A smoking bishop uses fewer spices, in fact my recipe uses only one: cloves. The only other aromatics being the oils released from the burnt bitter orange rinds. Aside from that, just a little water and some dark brown sugar are added to taste.

It’s a delicious and easy drink to make, and you will never go back to mulled red wine again once you’ve tried it, so please give it a go; you won’t be disappointed!

Smoking bishop can be made ahead of time, strained, and reheated with great success.

One 750 ml bottle of port

3 oranges (Seville, if possible)

8 cloves

250ml water

Dark brown sugar to taste

Place the oranges on a tray and bake at 200°C for around 25 minutes until they have started to blacken and give off their delicious burnt aroma. Remove from the oven and allow to cool a little before slicing them up.

Next, pour the full bottle of port into a saucepan (very satisfying to do) along with the oranges and any orange juicy bits, as well as the cloves and water.

Bring to a bare simmer – don’t let it boil! – and let it gently tick away at a scalding temperature (around 80°C) for around 20 minutes.

Add sugar to taste – if the oranges are very bitter and black, you might need quite a bit. If you don’t want bits of orange pulp and clove floating about in the drink, strain into a clean pan before adding the sugar.

If, in the unlikely event, you do not have a mitre-shaped punch bowl, you can simply ladle straight from the saucepan into punch glasses or small mugs.

Second Course: Hashed Chickens with Turnips and Roast Quinces (1660)

“It’s all back on again!”: Charles II

So, it’s the next course in my Dinner Party Through Time and we have moved up to 1660. It’s the year of the Restoration of the British Monarchy after that to-do with Oliver Cromwell.

Now this recipe has turned out to be a bit of a mystery because as I write it up for you from my notebooks, dear reader, I cannot find out which seventeenth century cook book it is from! My notes say the year, but nothing else. Those of you that like historical cook books will be thinking “the idiot! It’s the Accomplisht Cook by Robert May that he is looking for.” But no, it’s not there. I have looked and looked; through my own collection as well as the internet and I cannot find these blessed chickens or turnips anywhere. If anyone can help me out here, I’d be most grateful.

Anyway, let’s get on with the recipe. Poached chicken is served here with turnips in a creamy and tart sauce. Many things are served as a hash in old books as well as new. In this case, a hash is essentially meat served with some vegetables. As we go on through time, a hash becomes more of a left-over dish, such as the famous corned beef hash.

Along with the hashed chickens, I served up some quinces roasted up with butter, sugar and honey; a typical way of cooking them in the mid-seventeenth century. I couldn’t do a dinner party through time without including the delicious quince.

One last thing before I give you the recipe – use good quality truly free-range chickens. A mass-produced supermarket bird (even a free-range one) will not cut the mustard. I got my chicken, via my local butcher, from the very excellent Packington. Ask your butcher for the nearest similar supplier to you. They do cost quite a lot more, but it is well worth it, and you can certainly tell by the quality of the cooking liquor from poaching the chickens. It makes the base of a delicious soup, so on no account throw it away!

Right, on we go…

For the chickens:

2 free-range large chickens, e.g. from Packingham

2 onions, quartered

2 carrots, peeled and coarsely chopped

4 sticks celery, coarsely chopped

1 fennel bulb, coarsely chopped

bouquet garni of bay leaves, thyme, rosemary

1 tsp black peppercorns

blade of mace

2 tsp salt

For the quinces:

6 good-sized quinces, peeled, cored and quartered

6 knobs of butter

1 tbs sugar

1 tbs honey

For the turnips:

1 kg turnips, peeled and cut into 2cm/1 inch cubes

100g butter

chicken or vegetable stock

75ml white wine or cider vinegar

1 tsp salt

2 tsp sugar

¼ tsp each ground black pepper and ground ginger

2 egg yolks

150ml double cream

Garnish: thinly sliced toast

It looks quite a list of ingredients here, but it’s actually pretty straight-forward. Don’t worry if some things are ready before others – everything can be kept warm under foil or in a low oven.

Start by placing all of the ingredients for the turnips, except for the cream and egg yolks, in a saucepan, adding just enough stock to almost cover them. Cover, and cook on a bare simmer for around 2 hours until very tender. Next, strain the cooking liquor into another saucepan over a low heat. Beat together the yolks and cream and pour into strained liquor, whisking all the time. The sauce with thicken as you whisk. Whatever you do, do not allow the sauce to boil. Return the sauce to the turnips.

During the 2 hours the turnips cook, get on with the other elements of the dish. Lower your chickens, which you might like to quarter first, into a deep stock pot. Get them tightly-packed and snug. Tuck in the vegetables, herbs and spices. Pour in enough water so that it almost covers everything. Pop on the lid and slowly bring to a simmer; let it plop and gurgle only a little. Check a leg after 35 minutes, if it’s nice and tender, you are done. If you are using a really free-range chicken, it may take a little longer.

As you wait for the chicken and turnips to cook, you can get on with the roast quince. Arrange them in an ovenproof dish and coat them in the sugar and honey. Place knobs of butter between the quince pieces. Roast in a moderate oven, around 180⁰C, until tender; around 20-30 minutes. Make sure you turn them every now and again. When ready, keep warm under foil.

Arrange the chicken meat on or off the bone as you prefer with the turnips and quinces all around. Pour over some sauce and tuck in the toast. Serve extra sauce is boats or jugs.

Forgotten Foods #2: Verjuice

Verjuice was a very popular cooking ingredient from the Middle Ages onwards. Many old recipes ask for it and they seem to hit a peak during Tudor times. It is essentially the juice of either sour grapes or crab apples; Britain might not be the best place to grow delicious sweet grapes, but we can certainly excel in growing sour fruit! It took the place of fresh lemon juice in recipes for salad dressings, desserts like syllabubs; it was added to stews, soups and sauces as a seasoning, as well as an ingredient in marinades. It was also believed to have medicinal properties; for example, it was mixed with olive oil and blown up horses’ noses to treat colds! It was basically a necessary piece of kit in any kitchen, seeming to drop out of favour by the end of eighteenth century when lemons became more accessible.

The word verjuice comes from the Old French verjus, with ver-  meaning green or unripe and –jus being juice. The earliest written mention of it in British literature comes from around 1302, so we are talking old. It must have been such a useful ingredient in a place where fresh lemons will have either have been impossible to get hold of or terribly expensive.

I expected never to taste verjuice, but then as I was wandering around the excellent Global Foods Market in St Louis minding my own business, I happened upon a jar of it in the Middle East aisle of the shop. Naturally I bought some and thought I’d try some original recipes where verjuice was a main ingredient rather than just a seasoning.

In the 1897 volume of Good Housekeeping the subject of using verjuice in salad dressings inexplicably crops up. It takes quotes from the 17th century cook book The English Huswife by Gervase Markham. Anyway, it says that if you want to make a simple sallet then make a dressing of verjuice, sallet [olive] oil and sugar. Use it with sparagus, camphire, cucumbers, leeks, blanched carrots, purslane, with a world of others too tedious to nominate. He must have been in a bit of a mood the day he wrote that part.

It was a pretty brief recipe. Although verjuice is very tart, its underlying flavours are rather subtle so it needed quite a high ratio of verjuice to oil (much more than vinegar or lemon juice dressings).

I mixed together 4 tablespoons each of verjuice and extra virgin olive oil. To offset the sourness, I added a teaspoon of soft dark brown sugar, stirring until it dissolved. Lastly I seasoned it with a little salt and pepper. Easy and surprisingly subtle. Any leftover dressing can be stored and blown up your horse’s nose should it ever get a sniffle.

Sweet verjuice ‘scrambled eggs’ with brioche toast

I recently wrote a post about fruit curds, and I seem to have found a possible source of the preserve when looking for verjuice recipes. There is a recipe in Le Patissier François (published around 1690) that has helpfully been translated into English by Harold McGee where verjuice and salt are added to eggs in order to make them coagulate at a lower temperature, tenderising them:

Break four eggs, beat them, adjust with salt and four spoonsful of verjus, put the mix on the fire, and stir gently with a silver spoon just until the eggs thicken enough, and then take them off the fire and stir them a bit more as they thicken. One can make scrambles eggs in the same way with lemon or orange juice.

It is of Mr McGee’s opinion that a sweetened version of this recipe could be the origin of the fruit curd. Notice that fresh lemons or oranges can be used, suggesting that they are less common than verjuice.

Below is my interpretation of that recipe. I add plenty of acidic verjuice and a large pinch of salt, meaning that the ‘scrambled eggs’ actually end up thickening more like a custard. I have to say it was delicious, so if you ever do come across some verjuice have a go at this recipe:

Ingredients (for 2 people)
A good knob of butter
2 eggs
6 tbs verjuice
good pinch of salt
2 level tbs sugar
2 slices of brioche

Melt the butter in a saucepan on a medium heat. Whisk together the eggs, verjuice, salt and sugar until there is no trace of white left. Pour the egg mixture in the saucepan and carry on whisking over a medium heat. Meanwhile toast the slices of brioche. When the eggs have thickened and are just about to boil, pour them into two small pots and serve with the brioche.

Treacle Tart

A classic British nursery pudding, the treacle tart is much-loved. It is probably the ultimate child’s dessert because it is so unbelievably sweet; it makes my teeth hurt just looking at one! That aside, I have never really lost my sweet tooth and I love treacle – meaning golden syrup of course in this case (see here for a post on treacle). Treacle tart was very popular with poorer families – the two main ingredients being bread and treacle – no expensive fruits and spices here.

The pudding itself as we know it has only been in existence since the late nineteenth century since golden syrup was invented in the 1880s. However, the earliest recipe I have found for a treacle tart actually dates to 1879 – before the invention of golden syrup! The recipe is by Mary Jewry and is a tart made up of alternating layers of pastry and treacle. The treacle here is black treacle, and this highlights the problem in researching the origins of this pudding; treacle meant any viscous syrup that was a byproduct of sugar refinery and specifics are not always pointed out, even after golden syrup became popular. The other problem is the recipe Mary Jewry gives is nothing like the beloved treacle tart from our childhood.

Prior to the 17th century, treacle was used as a medicine; it was considered very good for the blood and was therefore used in antidotes to poisons. It starts cropping up in recipes for gingerbread in the mid-18th century. Jane Grigson mentions a gingerbread recipe from 1420 in her book English Food where spices and breadcrumbs were mixed together with plenty of honey to make a gingerbread that seems pretty similar a modern treacle tart, but without the pastry. Heston Blumenthal in his book Total Perfection also mentions a 17th century ‘tart of bread’ where bread and treacle are mixed with bread, spices and dried fruit and baked in an open pastry shell. Then just to complicate things further, Jane Grigson mentions that the predecessor to the treacle tart is the sweetmeat cake – again a 17th century invention – that uses candied orange peel, sugar and butter as a filling and no treacle or bread whatsoever!

All this confusing history waffle is giving me a headache. Here’s the recipe that I use for a treacle tart. It is adapted from Nigel Slater’s. I like it (and I have tried several recently) because it has a lot more bread in it than most other recipes – treacle tart should be chewy with a hint of   and must hold its shape when cut, many recipes fail in this respect. I use brown bread crumbs – it gives a good flavour and increases the chewiness level a little further.

There’s a pound and a half of golden syrup in this tart so the sweetness really needs cutting with some lemon juice and zest, and if you like, a tablespoon or two of black treacle; it’s not just a nod to treacle tarts of the past, its bitterness really does tone down the sweetness. This tart makes enough for ten people I would say. Be warned – if you go for some seconds, you may fall into some kind of sugar-induced diabetic coma…

For the pastry

4 oz salted butter or 2 oz each butter and lard cut into cubes and chilled

8 oz plain flour

3 tbs chilled water

For the filling

1 ½ lbs golden syrup

2 tbs black treacle (optional)

juice and zest of a lemon

10 oz white or brown breadcrumbs

The pastry is a straight-forward shortcrust. Rub the fat into the flour with your fingertips, a pastry blender, the flat ‘K’ beater of a mixer or blitz in a food processor. Mix in two tablespoons of water with your hand and once incorporated, add the last tablespoon. The pastry should come together into a ball. Knead the dough very briefly so that it is soft and pliable. Cover with clingfilm and put in the fridge to have a little rest for 30 minutes or so.

Now roll out the pastry and use it to line a 9 inch tart tin. Put back into the fridge again – you don’t have to do this step, but sometimes the pastry can collapse a bit when it goes in the oven at room temperature.

Whilst the pastry is cooling, get on with the treacle filling. Treacle can be a tricky customer: weigh it out straight into a saucepan on tared scales and then pour the golden syrup straight in. Add the black treacle if using. Place the pan over a medium heat and stir until it becomes quite runny, then stir in the lemon juice and zest and the breadcrumbs.

Pour this mixture into the lined tart tin and bake in the oven at 200⁰C (400⁰F) for 15 minutes, then turn the heat down to 180⁰C (350⁰F) for another 15 or 20 minutes.

Best served warm with cream, ice cream or custard.

What is a Pudding?: Addendum

Quite a while ago, I wrote a post called ‘What is a Pudding?‘ and it seems I made a few little errors within. I don’t like to be wrong, so thought I would put it right. The subject was a little essay on the origins of puddings – the boiled and steamed kind, which I argued was the proper definition of a pudding. I still don’t think I am wrong on that count, but I did accuse some puddings of being mock puddings:

So, a pudding is any dessert, or the name for the dessert course. Aside from the proper puddings…there are some that go under a false name: bread and butter pudding [and] sticky toffee pudding…are examples of this. Why are these puddings and, say, an apple pie not called an apple pie pudding?

Well it seems that I can answer my own question, at least in part. I was flicking through The English Huswife, Containing the Inward and Outward Virtues Which Ought to Be in a Complete Woman by Gervase Markham which dates from 1615 (for context King James I of England and VI of Scotland was reigning) and it seems that some of the puddings that are baked today have their roots in the simmering pot. In fact a pair of my favourites – the rice pudding and previously accused bread and butter pudding are specifically mentioned. Their forerunners were cooked in natural intestinal casings – farmes – just like black puddings:

Rice puddings

Take half a pound of rice, and steep it in new milk a whole night, and in the morning drain it, and let the milk drop away; then take a quart of the best, sweetest and thickest cream, and put the rice into it, and boil it a little; then set it to cool an hour or two, and after put in the yolks of half a dozen eggs, a little pepper, cloves, mace, currants,dates, sugar and salt; and having mixed them well together, put in a great store of beef suet well beaten and small shred, and so put it into the farmes…and serve them after a day old.

To make bread puddings

Take the yolks and whites of a dozen or fourteen eggs, and, having beat them very well, put to them the fine powder of cloves, mace, nutmegs, sugar, cinnamon, saffron, and salt; then take the quantity of two loaves of white grated bread, dates (very small shred) and great store of currants, with good plenty either of sheep’s, hog’s or beef suet beaten and cut small; then when all is mixed and stirred well together, and hath stood a while to settle, then fill it into farmes…and in like manner boil them, cook them, and serve them to the table.

I was corrected on the sticky toffee pudding in that post… I wonder how many other puddings that are not boiled today once were? I shall go through the books with a fine-toothed comb and report back. More interestingly, I need to get my hands on some farmes and make these bad boys myself and see how they compare to their modern counterparts…

Christmas Cake

Christmas cake, Christmas pudding, mince pies – if you don’t like dried fruit you are in trouble at Christmastime!

The Christmas cake as we know it comes from two Christian feast days: Twelfth Night and Easter.

When families in the sixteenth century made their Christmas puddings for the big day, they would often use some of the mixture, with the addition of flour and eggs, to bake and eat for Eastertime. These were obviously rather rich families. It was liked so much that the rich fruitcake was made for Christmas too. We also dropped it from the Easter menu for some reason.

The addition of the marzipan and royal icing (see here for recipes) came much later when a cake was banned from Christmas. The last day of Christmas is Twelfth Night (the 5th of January) and it used to be traditional to make a Twelfth Night cake that contained almonds and was covered in marzipan. Oliver Crowell, the Lord Protector of England, and the other Puritans banned the feasting on that special day in the 1640s (he also banned mince pies as well) complaining that there was too much excess. Christmas Day remained a public holiday and some feasting was allowed, so people simply made their Christmas cake and covered that in marzipan instead, and so the Christmas cake was born.

You don’t have to cover it with the marzipan and royal icing though, in Yorkshire (my home county) it is popular to eat the Christmas cake with some nice cheese such as Wensleydale or Cheddar instead.

I love Christmas cake, so I thought I would give you the recipe I always use – it is adapted from Jane Grigson’s English Food (click here to see my other pet project) – and it has never failed on me. As I said a couple of posts ago, if you want to eat top-quality food at Christmas, you need to make your own, or spend a fortune at Harrod’s. Plus the cake is made well in advance – I usually make mine 6 weeks before Christmas so it can mature. Once you’ve cooked it, you only have to feed it with a little brandy to make it nice and moist.

This recipe is of course for an English-style Christmas cake; the Scottish, Welsh and Irish have their own versions, all in a similar vein, but with a few differences. I’ll blog about them at some point.

It makes one hefty 8 inch/20 cm cake, for a smaller cake, half the amounts and bake in a 6 inch / 15 cm tin for 2 1/2 hours.

Ingredients:

900 g mixed dried fruit (currants, raisins and sultanas)

125 g of whole roasted almonds (or hazelnuts or walnuts, or a mixture)

125 g chopped candied citrus peel

125 g rinsed glacé cherries quartered or left whole

300 g plain flour

1 1/2 tsp mixed spice

the grated rind of a lemon

250 g salted butter, softened

250 g soft dark brown sugar

1 tsp vanilla extract

1 tbs black treacle (or molasses)

4 eggs

1/2 tsp bicarbonate of soda

1 tbs warmed milk

brandy

Preheat your oven to 140⁰C (275⁰F).

Begin by mixing all the dried fruit, almonds, candied peel and cherries in a large bowl. Next, sift in the flour, turning in and coating the fruit, then mix in the spices and fresh lemon rind.

Now cream the butter sugar in a separate bowl, then mix in the vanilla and black treacle. Beat in four eggs one by one until incorporated, and the mix in the fruit and the flour. For the final stage, dissolve the bicarbonate of soda in the warmed milk, stir it in, and then add enough brandy to slacken the mixture slightly, so that it achieves a dropping consistency – you don’t want a dry cake, now do you?

Line an eight inch cake tin with greaseproof paper and pour the mixture in, hollowing the top a little to compensate for it rising in the oven.

Cover with a layer of brown paper to prevent scorching and bake for 3 to 3 ½ hours. Test it after 3 hours with a skewer. When done, leave to cool in its tin overnight. Wrap in greaseproof paper or foil and keep in an airtight container.

Ideally, the cake should sit for at least a month to mature, but 2 or 3 weeks is also fine. Whilst it sits, you need to feed it with a sprinkle of 2 or 3 tablespoons of brandy, turning the cake each time it is fed.

The cake is ready to eat when sufficiently fed and matured, however, you might want to add a layer of marzipan and royal icing.
