Dock Pudding

The good thing about being a lover of British puddings is that there is an almost infinite number to cook and try. All of the pudding recipes I have posted on the blog thus far have all been of the sweet variety, and they have all been fairly well known, but this year I am going to try and write some posts and recipes for savoury or obscure ones. First up is dock pudding which happens to tick both of those boxes. This pudding is one I have been meaning to cook for years, but I’ve only gotten around to it until now.

Dock pudding used to be very popular in Yorkshire, especially in the Calder Valley, West Yorkshire. The dock in question isn’t the common dock (the one you rub on nettle stings) but a particular species that goes under several names including bistort, passion dock and sweet dock, its Latin name is Polygonum bistorta.[1] It can be distinguished from the common dock by its yellowish spear-shaped leaves. The leaves are collected when young, alongside tender nettle tops, there is a recipe for it in Alexis Soyer’s classic 19th century work A Shilling Cookery For the People, where it is made with a mix of two-thirds passion dock, and one-third nettles.[2] These were supplemented or replaced with whatever greens were around: sorrel, raspberry leaves, chives, spinach, etc, the choice changing with the season. These are washed, sliced and cooked with onion or leek and oatmeal to make a very dark green porridge, which is fried in dollops in bacon fat, lard or beef dripping.[3] It has been likened to Welsh laverbread in colour and flavour, in that you will either love it or hate it.[4] It sometimes goes by the name herb pudding, which makes sense seeing as docks are only eaten in the springtime when they are tender. It is mixed with more oatmeal and water, tied in a cloth and boiled, cooled and fried in slices.

Technically, then, I could have used any green leaves, but I really wanted to make it with Passion dock; so called because it is found growing during Passion Week, the last week of Lent.[5] It was an extremely important food, the first fresh green vegetable after a winter of eating only pickled vegetables and salted meats. Many people were showing signs of scurvy by early spring, so few fresh vegetables were eaten. Dock is also said to be an excellent blood cleanser and good for the skin too, being a preventative of spots and pimples.[6]

Dock pudding was especially popular in the Victorian era, but was considered a famine food in the 20th century.[7] Very few people eat it now, but there is an outlier because the West Yorkshire town of Mytholmroyd has held the World Dock Pudding Championships every May since 1971.[8] I’m going to try my best to go next year.

I found a patch of Passion dock growing in the Cheshire town of Lymm last year, but they were far too old and tough to pick, but I remembered this year. Oddly, I couldn’t find any nettles, but I did spot some sorrel and some wild garlic. I was in a bit of a rush, and didn’t have enough to make the very green sort of pudding, but I didn’t want to boil one (to save on fuel), so tried a common trick of cooking it in a saucepan, pouring and setting it in a tub so I could slice and fry it. This method is sometimes used for other savoury puddings such as black pudding or mealy pudding.

Makes 8 to 10 slices of pudding:

100 g trimmed, young leaves of any amount of the following: passion dock, nettles, spinach, sorrel or any other edible greens you like

1 leek or onion, sliced thinly

80 g oatmeal (not rolled oats)

1 tsp salt

Freshly ground black pepper

400 ml water

A smidge of flavourless oil such as sunflower or groundnut

8 rashers of streaky bacon

30 g lard or dripping, or 2 tbs of your favourite frying fat or oil

Your pudding needs to be cooked, cooled and set the day before you want to eat it (or several days before if you like). To do this, shred the leaves and add them to a pan with the leek or onion, oatmeal, salt, pepper and water. Bring to a simmer, stirring so that it doesn’t form lumps.

Cook for around 20 minutes and all of the vegetables are soft, then take off the heat. Now take a tub of around 1 litre capacity and brush with the oil. Pour the pudding into the tub, cover, cool and then refrigerate.

When you want to cook your pudding, first fry the bacon in your chosen frying fat or oil over a medium heat until very crisp. As they cook, prepare the pudding: turn out onto a board and cut even slices between 1 and 1.5 cm thick. It’s best to use a serrated knife for this task.

Remove the bacon rashers and keep warm as you fry the pudding slices: turn up the heat to medium-high and pop in the slices. It’s a bit like making bubble and squeak in that you need to wait and allow them to build up a good, crisp fried layer before you disturb them: a good 5 minutes. Turn over with a spatula and fry the other side for a further 4 or 5 minutes.

When ready, serve up with the bacon and whatever other breakfast things you like. I went with fried eggs.

Forgotten Foods #9: Carrageen Pudding

This pudding has been on my ‘to post’ list for absolutely ages. It has become of my favourites, though as you will discover as you read the post, not everyone agrees with me. I’ve called it a forgotten food, but it is still well-known in Ireland. It was popular in many parts of England too, but it doesn’t seem to get made anymore. Carrageen pudding is a set dessert akin to jellies, blancmanges and flummeries, but it is made from the gelatinous seaweed carrageen, also known as Irish moss. It used to be gathered in Yorkshire and South-West England, going by the name ‘Dorset Moss’.1

I first made it in 2015 as part of one of my semi-regular Pud Clubs; I always liked to make one risky pud, and carrageen pudding was it. I flavoured it the traditional way with sugar, lemon and brandy. I didn’t particularly like the taste: there was something of a Lemsip about it. If I remember rightly, it was voted worst pudding of the day. However it wasn’t the flavour that put people off; it is more gummy than a gelatine set dessert, and doesn’t dissolve cleanly in the mouth. As John Wright puts it: it doesn’t have an acquired taste – it barely has any  – ‘more of an acquired texture.’2 That particular Pud Club was the closest I’ve seen anyone get to vomiting at one of my paid food events.

I returned to it later in the year after I’d had the idea for a seaside-themed popup restaurant, and though I could use it in the dessert course. I refined the recipe, adding some whipped cream to give it a mousse-like texture and flavoured it with elderflowers. I combined it with a gooseberry sherbet, and I was pretty pleased with it.

What is carrageen?

Carrageen is a common seaweed found throughout the coasts British Isles, except for parts of Lincolnshire and East Anglia.2 It is found in rockpools, is branched and a dark red colour. The wonderful food writer Theodora Fitzgibbon describes it as ‘a branching mucilaginous seaweed found on all rocks in Ireland’, which does not sound appetising, I realise. She goes on the comfort the reader, telling us that ‘it does not taste at all marine when properly prepared.’3 It is picked and dried in the sun, typically in April and May, and during the process it lightens from a dark red-brown to a creamy brownish beige, tinged with a pink-red hue.

To prepare carrageen, it is reconstituted in cold water, drained and then simmered in fresh water. It quickly turns viscous, bubbling away like the contents of a witch’s cauldron. The gloopiness is caused by the release of a trio of closely-related carbohydrates together called carrageenan.2 To extract it properly, the whole lot has to be squeezed through some muslin (cheesecloth). These carbohydrates are not digested by the body, and are therefore an excellent source of soluble fibre. Indeed, carrageen has been used as a treatment for a range of stomach and digestive complains and it ‘is considered extremely salutary for persons of delicate constitutions’.4 Its viscosity also made it a common treatment for sore throats and chest complaints. It also ‘fills plaster pores, makes wallpaper dressings…and fixes false teeth.’1

Today carrageenan is commonly found in factory foods. For example, fat-free yoghurts no longer able to set properly are thickened with carrageenan. It is perfectly safe to eat, but foods that contain it should be avoided, because its inclusion is a dead giveaway that the food has been highly processed. Eat your yoghurt lipid intacta.

Don’t let my previous description put you off making this dessert; I really think I have the recipe right. The texture is good and is certainly better than using cornflour to set desserts.

Cobnuts, Filberts & Hazelnuts (& Cobnut Cake)

One of my favourite seasonal foods are fresh Kentish cobnuts, and they are in season right now, so I thought I’d write a little post about them in case you see them at your local greengrocer’s shop. In the north of England they are difficult to get hold of, and when you do see them they cost a small fortune, but luckily for me, I was in London last weekend and spotted a fruit seller outside Borough Market selling big punnets at just £3.50 a pop. Up North, I’d have had to remortgage.

Cobnut season runs from late August to October in the UK, and they can – or, at least, their wild cousins can – be found growing on wild hazel trees all around the country – in fact they grow in abundance near me in Manchester. Unfortunately, the squirrels beat me to them every year. Nutting season traditionally started on 20 August on St Philibert’s Day.1

There’s a little confusion regarding nomenclature here, as is so often the case, some call these nuts cobnuts, others filberts, and some call them simply hazelnuts. Are there any real differences between the three or are they just regional names for the same thing? Well that all depends upon whom you ask, and when in time you ask.

Let’s start with the wild tree, the hazel, or to give its Latin name Corylus arellana. These nuts are hazels, or hazelnuts, they are elongate and flatter that the supermarket variety, but they still have the same smooth shells. This is what many people today would call a cobnut. This common tree produces nuts that was an important foodstuff for Neolithic humans, and they have been cultivated since Roman times.2,3 These cultivated trees were bred for greater yields and larger nuts changing making them more spherical in shape. These round nuts were called cobs, or cobnuts, and they are what we would call hazelnuts today. They grow so well in Kent that at one point 7000 acres of land was put aside for their cultivation, plenty to export a significant number to the United States.3

Okay, let’s, for the sake of argument, say that hazels are the wild nuts and cobnuts are their cultivated cousins, where do filberts fit in? Well, these are a larger cultivated nut from a completely different species of hazel (C. americanus).4 They were regarded as a rather upmarket orchard fruit, whilst cobnuts were considered more suitable for the hedgerow (or did they mean hazels!?).3

Today, cobnuts appear to be a catch-all term for any of the elongate forms of hazelnuts. The great thing about getting them fresh is that they have a lovely crisp, refreshing flavour, rather like water chestnut but with a mild hazelnut flavour. They are still covered in their green protective coats (shucks) and sometimes even the shell is still green. They store well and can be dried and eaten months later. An alternative to drying is to shell the fresh kernels and store them in honey. I expect the fresh kernels would make very successful pine nut replacement in pesto.

Kentish Cobnut Cake

The best known traditional food made with cobnuts is Kentish cobnut cake. A dense cake flavoured with ginger and sweetened with some kind of unrefined sugar or honey. Some are made like a sponge cake by creaming butter and sugar, others are made by melting butter and syrup/sugar together. I go for the latter method. I found a few recipes that include a good dollop of double cream in the mix, so I’ve added it my recipe. This produces a dense cake, which I prefer, but if you want to make a lighter one, mix a teaspoon of baking powder into the flour and swap the cream for around half its volume of milk (i.e. 80 ml). Being a syrupy cake, it benefits from a couple of days’ maturing time in an air-tight box. You can use any syrup you like, or indeed any unrefined sugar. Honey works very well, especially if you have stored within it some cobnut kernels. As far as the nuts go: hazels, cobnuts or filberts all work equally well.

Makes one 8 inch/23 cm cake.

180 g butter

120 g golden syrup or honey

80 g Demerara, or any brown sugar

150 ml double cream (or 80 ml milk, if going for the lighter option)

3 knobs preserved ginger, chopped

2 eggs, beaten

240 g self-raising flour

1 tsp baking powder (optional; use if going for the lighter option)

1 ½ tbs ground ginger

100-150 g whole cobnuts, shelled weight

Preheat oven to 160°C and line a 20 cm round cake tin.

Melt the butter, syrup or honey and sugar in a saucepan, stirring until sugar is dissolved. Take off the heat and mix in the cream (or milk), chopped preserved ginger and then the eggs.

Mix the baking powder, if using, into the flour, then mix in the ground ginger and cobnuts. Make a well in the centre and pour in the butter-sugar mixture, stirring slowly with a whisk until the batter is smooth.

Pour into the lined cake tin and bake for anywhere between 1 and 1 ¼ hours. Test it is ready using a skewer. Cool in the tin.

Elderflowers

There is no hedgerow glory finer than the elderflower

One benefit of lockdown life is my daily hour-long meander around the green areas of Levenshulme. And at this time of year there is a real treat for those who like to forage; all I needed to do was to wait for a few dry, sunny and hot days in a row – something not that common in Manchester – and I could get my paws on probably the best foraged food, the elderflower. Patience was a virtue and last week the planets aligned, and I filled my boots. Well, my tote bag.

I love the taste of them so much and I am always disappointed if I don’t get hold of some at least once per year. The smell is heady with that earthy Muscat fragrance, and is a potent addition to many foods, classically partnered with the gooseberry. Elderflower syrups and cordials stretch back to at least Tudor times, and classic elderflower champagne seems to have become popular in the late Victorian era, peaking in popularity in the 1920s. If you have never cooked with them then you are missing a treat, but don’t worry, there is a good few weeks left of the season if you want to get hold of some – all we need are some more sunny days.

The elder has been used for medicinal purposes for centuries and has a very interesting folklore; I plan to write a post on the Elder tree later in the year, so for now I’ll just talk about the flowers. Because the foliage and green stalks are mildly poisonous, elderflowers and leaves together have been used as a purgative since the days of Hippocrates. In Britain, it is traditionally used to sooth sore throats and reduce the intensity of flu symptoms. I don’t know if there is truth in any of that, but what I do know is that it has a positive effect on my mental health, so delicious is the uplifting aroma when introduced to all sorts of foods; and in these strange times we all need a mental health boost I’m sure you’ll agree.

The elder is one of Europe’s most common trees and is an almost ubiquitous member of hedgerows and scrubland throughout Britain, only thinning out sparsely in the north of Scotland. It flowers between the months of late May and early July, the precise dates changing with latitude: the north being a good two weeks behind the south. At this time there are few trees you could confuse it with: the bark is pale, gnarly and often spindly and looks old beyond its years. At this time of year though, you smell it before you see it.

The flat arrangement of tiny cream coloured flowerheads are called ‘plates’ that also go under the name of curds, hands or (my favourite) slices of bread depending on where you are in the country. Pick them in the late afternoon after two or three days of dry sunny weather and give the flowers a good sniff to check they are full of fragrance. Snip the heads off with some scissors – aim to get between twelve and eighteen hands. Once collected, head on home and use them before their fragrance begins to dissipate.

What you do with your elderflowers once home depends upon what you want to make. If they are not going to be heated up or cooked in any way, it’s important to snip away as much green stalk as possible because as mentioned the foliage is slightly poisonous. Whatever you do, don’t wash them; you’ll wash away the scent. Just check over them and pick off any insects that may be residing in amongst the blooms.

Elderflowers are normally used to flavour foods, rather than as a food themselves, the only example I can think of where they are actually eaten is the elderflower fritter. When introducing them to hot liquids, snip away the stalks and tie the flowers up loosely in muslin and use it to flavour scalding hot cream or milk to make a delicious elderflower custard to pour over gooseberry pudding – or freeze it to make ice cream. I have made elderflower syllabub, blancmange and even Irish carrageen pudding, which once made it onto a seaside-themed pop-up restaurant back in the day. You can add it to cooking gooseberries if making a crumble, or pop some in toward the end of the cooking time when making gooseberry jam.

The best thing you can make by a country mile is elderflower gin and it is the simplest and quickest of the cold infusions. Because it doesn’t require any cooking, the true taste of the springtime hedgerow is perfectly preserved.

Snip between 12 and 18 elderflower heads into a large jar with a two tablespoons of caster sugar and a litre of gin. Seal the jar and give it a good swirl twice a day to dissolve the sugar. After three days, strain through a muslin-lined sieve into bottles and you are done. You can then enjoy the best gin and tonic of your life.

We have now reached the pinnacle of deliciousness. This was not my idea, but my ex-business husband Mr Brian Mulhearn’s and it is very delicious. For one drink, you will need:

Ice

2 shots of elderflower gin

1 shot fresh lemon juice

½ – 1 shot gomme (stock sugar syrup)

Soda water

Place some ice in a cocktail shaker with the gin, juice and gomme to taste. Shake well and strain into a glass generously filled with ice. Top up with soda water. Bliss.

Variations:

For a liqueur far superior to St Germaine, make as for the gin, but use vodka and add between 120 and 150 g of sugar, depending upon the sweetness of your tooth.

For elderflower vinegar, make as for gin, using 500 ml of cider vinegar. Leave in a sunny spot for a week, swirling regularly. For a great salad, dress some rocket leaves and a few halved or quartered strawberries with the vinegar plus salt and plenty of black pepper. It makes an excellent accompaniment for poached salmon.

Gooseberries

‘Country life has its advantages’, he used to say, ‘You sit on the veranda drinking tea and your ducklings swim on the pond, and everything smells good…and there are gooseberries.’

The humble gooseberry is not the first of the British summer fruits that springs to mind, but it is the first of the season, and I think it should be celebrated just as much as the strawberry or blackcurrant.

It’s quite difficult to find gooseberries in the shops these days – even good greengrocers don’t seem to sell them, which is odd, because they keep better than any of our other soft fruits. I suppose one of the reasons for its unpopularity is that they are usually sold when vibrant green, looking lovely and fresh but tasting very sour and astringent. In this form they need to be cooked and sweetened with sugar. Its other disadvantage is that it usually has to be cooked, no competition amongst the huge variety of exciting dessert fruits available. It’s a crying shame. Gooseberry season starts in June, but you have to wait until July for them to ripen into dessert fruit. Patience is a virtue, after all.

The gooseberry is usually a fruit more suitable for cooking, needing considerable sweetening for palatability unless a savoury accompaniment for meat or fish.

The gooseberry is one of 150 species of the Ribes genus, which also includes the smaller and daintier black, red and whitecurrants. They can be found growing wild in patches of scrub all over Britain, so keep an eye out wherever you see such areas on walks, there may be a hidden gooseberry plant (I have my own a secret patch). Gooseberry shrubs are typically three for four feet high, and as any gooseberry forager knows, somewhat spikey.

There are many cultivated varieties including two hybrids; red and white gooseberry varieties have been crossed with red and whitecurrants respectively. The hybrids make excellent dessert fruit, helpfully indicting ripeness when they’ve achieved a good ruby or white colour.

Though looked over now, gooseberries were extremely popular and have been cultivated in Britain since al least the Fifteenth Century. They were important because they were the first soft fruit of the summer, cropping well as far north as the Shetland and Orkney Islands. In the Midlands and Northern England they were revered, a tradition of competitive growing quickly developing. There was a single aim in these competitions: to grow the heaviest berry. These clubs were widespread and at one point there was 170 growing clubs, a handful still exist today in Yorkshire and Cheshire. To achieve heavy berries, by the way, you must strip your shrub of berries as soon as they appear, leaving behind a dozen so that the plant can put all its energy into growing just a few fruits.

Gooseberries are also known colloquially as feabes, feaberries, carberries and wineberries – the latter name coming from the fact they make excellent wine.

Aside from some parts of northern Europe, gooseberries haven’t really travelled much further than Britain from a culinary point of view. According to Jane Grigson, the French ‘have no name for them distinct from that of redcurrants’. This does seem to be the case; the French word for redcurrant is grosielle and when gooseberries are called for, they are called grosielle à maquereaux – the mackerel redcurrant.

Although sometimes served with goose, it is not the origin of the gooseberry’s name as you might assume. It comes from the Old Norman/Middle English groses or grosier, the old word for – wait for it – grosielle, the French for redcurrant, so in effect we called gooseberries redcurrantberries! All of these words come from the Frankish root krûsil which means ‘crisp berry’, and the gooseberry certainly is that.

Yellow and red are dessert fruit, let them lie on the hottest sunshine till warm through before serving – it brings out the sweetness and flavours.

Preparing and Cooking Gooseberries

Whether you are picking them or buying them, you need to know how ripe your gooseberries are. This important because small, vivid green gooseberries are best for accompanying savoury dishes, and large riper ones are best made into puddings. I remember as a child, dipping raw, tart gooseberries straight into the sugar bowl. I expect the Sugar Police would have something to say about that these days.

To prepare your gooseberries, wash well with and top and tail them with sharp scissors or pinching fingernails.

If you have lots of gooseberries, you can do several things. Pop some straight into freezer bags or stew them with sugar, a little water and a knob of butter and freeze that. I prefer to make jam or vinegar if I’m going to preserve them. When they cook, they start to lose their colour and if boiled very thoroughly, like for jam, they attain a lovely deep pink.

Gooseberry compote is very useful; it can be served simply with ice cream for a quick dessert, or baked in the oven as a pie, crumble or cobbler. A classic dessert is gooseberry fool, simply compote folded into lightly whipped, sweetened cream, or even better a mixture of custard and whipped cream.

Other desserts include steamed puddings and a delicious baked pudding rather like an Eve’s pudding: I shall be certainly posting a recipe for that. Old fashioned pies called Oldbury tarts made with hot water pastry used to be very popular. Sometimes the pies were filled with red or whitecurrant jelly, just like an old-fashioned raised pork pie – I bet they would be great served with cheese.

I cannot talk about the culinary potential of gooseberries without mentioning elderflowers. I love their delicious sweet-musk scent and add it to anything I possibly can. Back in the days of the restaurant, I made an excellent elderflower blancmange with gooseberry compote and shortbread biscuits, and I must say it was one of the best desserts I’ve ever made.

To add an elderflower air to your gooseberry dishes simply tie up a few heads in muslin before dunking them in your gooseberries or whatever.

In the next few posts, I’ll show you some of the recipes I have mentioned above, just in case you get a glut of them or spy a punnet in the greengrocers.

The King Alfred’s Cakes Fungus

Hello there folks, just a quick post relating to my previous one about Alfred the Great burning the cakes. As I was researching it, I came across a fungus I had not heard of before called King Alfred’s cakes. Regular readers will know that I like to go on a good forage and that I like to post about the food I find out and about.

The King Alfred’s cakes fungus, although I had not heard of it, is very recognisable to me because it is very common across the United Kingdom any time of year.

The black spherically-shaped fruiting bodies are not edible, but they do look a lot like burnt balls of dough, I’ve seen them all over the place, but never bothered looking them up in a fungi field guide because you can see that they are inedible.

However, it seems that there’s an epilogue to the fable: King Alfred, so mortified was he that he’d burnt the housewife’s bread cakes, he scattered the fungal cakes to hide his mistake and embarrassment.

The fungus sprouts almost exclusively from dead elm trees and fallen branches, so keep an eye out in woods, as the chance that this fungus is present is very high, looking remarkably like small round charcoal briquettes. It doesn’t rot away quickly like most other fungi, but it sits on the dead wood getting darker and more coal-like with age.

I’m not just posting about King Alfred’s cakes because of the link to the story, but also because they did (and do) have a use in the kitchen or fireside. The fungus’s fruiting bodies, when dry and brittle catch fire easily, but smoulder at a very slow rate, and as long as they are getting plenty of oxygen, one can use them to transplant fire from one location to another. Indeed, if enough are collected, they make excellent fuel in their own right. It is for this reason that the fungus is also called coal fungus.

How ironic would it be if the herdsman’s wife had used the King Alfred cake fungus to light or fuel her fire that King Alfred went to burn the cakes on!?

King Alfred’s cakes also go by the name of cramp balls, due to an old odd belief that carrying the fruiting bodies in your pocket alleviates cramp.

Natural History

The scientific name for this type of fungus is Daldinia concentrica, so-called because of the dark and light concentric growth rings you can see if you crack one open. Fruiting bodies are usually between 1 and 5 cm in diameter but can sometimes grow much larger. Daldinia is found in deciduous woodland and is almost entirely present on the dead wood of ash trees, and since the ash is our third most common tree, the chances are you’ll have some of the fungus growing in woods near you. Old fruiting bodies are black, but when they first emerge, they are red-brown colour, only blackening when mature.

The Dulse Gatherers by William Marshall Brown, 1863-1936

Nobody really eats dulse, or any other seaweed for that matter, in England these days, though they used to. It is a pity because I do like the stuff. It is eaten in Ireland and parts of Scotland still; I ask friends to bring back a bag of it whenever they cross the seas. I recently received a bag from my friend Hugh.

Dulse had been eaten for over one thousand years in North-Western Europe, the ancient Celtic Warriors of old ate dulse as they were marching, and during the seventeenth century British sailors ate it to prevent scurvy (although it was originally used as an alternative to chewing tobacco). Even today, its healthful properties are noted; my friend Evelyn from Ballymena, Northern Island tells me:

When I was pregnant, the midwife thought I was very healthy as my blood pressure and iron levels were so good. Iron goes up to 17 mg/dl max but I was the first person she’d seen that had 15 – apparently quite unheard of for a lady, especially a pregnant lady! We put it down to the dulse (nothing else remotely healthy going on at that time in my diet), and she’s been recommending it to everyone.

Its popularity in Ireland as well as Scotland led to dulse being popular in the USA too when they emigrated over the Pond, although none of my American friends seem to have heard of it.

The dulse industry has obviously died a bit of a death in England, and the rest of the UK and Ireland, compared to days of yore. Charles Dickens, writing in 1858, reminisces about childhood holidays in Aberdeen where there were often over a dozen ‘dulse-wives’ selling dulse:

[O]f all the figures on the Castlegate, none where more picturesque than the dulse-wives. They sat in a row on little wooden stools, with their wicker creels placed before them on the granite paving stones. Dressed in clean white mutches, or caps, with silk-hankerchiefs spread over their breasts, and blue stuff wrappers and petticoats, the ruddy and sonsie dulse-women looked the types of health and strength… Many a time, where my whole weekly income was a halfpenny, a Friday’s bawbee, I have expended it on dulse, in preference to apples, pears, blackberries, cranberries, strawberries, wild peas and sugar-sticks.

He recalls a conversation:

A young one would say: “Come to me, bonnie laddie, and I’ll gie ye mair for yer bawbee than any o’ them.”

An old one would say: “Come to me, bonnie laddie, and I’ll tell what like yer wife will be.”

“Yer dinner ken yerself.”

“Hoot aye – I ken brawly: she’ll hae a head and feet, an mou’, and eyen, and may be a nose, and will be as auld as me, if she lives as lang.”

“Aye: but ye gie me very little dulse for my bawbee.”

“Aye,” replies the honest woman, adding another handful, “but sic a wife is weel worth mair siller.”

The dulse-wives exploded into laughter, when the woman suggested some one like herself, as the ideal wife which youth is doomed always to pursue and never to attain.

Oh! those dulse-wives.

My friend Evelyn reminisces:

It comes with shells and little crustaceans on it; my friend Maisie used to spend hours ‘cleaning’ dulse & would then give me nice little bags with no icky bits on them. Strangely it doesn’t seem to fall under any health and safety rules. Old men that live by the sea just grab a load and dry it on the rocks in the sun.

You can also buy it dried and flaked in sealed bags looking  like reddish tea leaves. Even better, of course, you can forage for it. I must say seaside foraging forms a hole in my knowledge. I should try and remedy that.

Cooking with Dulse

Dulse can be eaten as is, or used in salad and sandwiches. I personally think it is best eaten cooked so I’ve included a couple of simple recipes for you.

Mashed Potato with Dulse

This is a great recipe and much healthier than regular mash because it uses olive oil as opposed to butter. It’s vegan and gluten free too, so you shouldn’t get any complaints from anyone!

It could not be easier, really. First, scrub and then boil some potatoes in their skins without adding any salt. Remove the skins and mash them. Next, finely shred the dulse and fry it in olive oil – you’ll need about 15 grams of dulse for every kilogram of potatoes used. Of course, if you are using the flakes, you can sprinkle them straight into the hot oil. This takes just a few seconds. Add the oil and dulse to the spuds and mix, mashing in some extra olive oil if need be. Season.

Serve with lamb, beef, chicken or fish

Lamb & Dulse Broth with Dulse Shards

I came up with this soup when I found some frozen lamb stock secreted at the back of a freezer-drawer recently. It draws on that classic combination of lamb and seaweed. This recipe requires the rock-dried dulse to make the sweet-tasting shards, but any dulse can be used for the soup itself.

Ingredients

1 tbs butter or olive oil

1 carrot, diced

1 stick celery, diced

a sprig of thyme

a sprig of rosemary

a bay leaf

60g red lentils

2 or 3 tbs dried, chopped dulse

1 litre well-flavoured lamb stock

salt & pepper

For the dulse shards:

‘leaves’ of dried dulse

sunflower, groundnut or rapeseed oil for frying

Melt the butter or oil in a saucepan, add the carrot, celery and herbs. Fry gently for 10 or 15 minutes until the vegetables are soft and translucent. Add the lentils and fry for another two minutes before adding the dulse and lamb stock. Bring to a simmer and cook for around 20-25 minutes until the lentils have cooked and broken up, thickening the broth. Season.

Meanwhile, prepare the dulse shards. Heat up some oil in a frying pan and when hot, throw just one or two dulse pieces into the oil. The dulse will immediately sizzle, crisp and change colour as if by magic. After just a few seconds, remove and drain on kitchen paper. Fry all your dulse pieces in this way, and break them up into shards and place them gently on top of your finished soup.

Chicken-of-the-Woods

I have written a few posts on foraging and natural history in Britain, here’s a little post about a lovely edible mushroom:

As I was walking in Lyme Park at the weekend I kept an eye out for edible goodies. Lyme Park is great for oyster mushrooms because of the large number of beech trees in the forests there. However, I did not expect to find a splendid chicken-of-the woods growing on a dead tree trunk just off the path to the children’s play area! Goodness knows how many had walked past it unaware of the delicious treat..

Although I am by no means an expert, I recognised it straight away – a large bracket fungus with multiple brackets with a beautiful and almost garish orange and sulphur-yellow coloration. In fact, another name for it is the sulphur polypore (the polypore part is because it doesn’t have gills on its underside like a typical fungus, but many tiny pores). There really is nothing else like it, so you can be pretty certain of what it is.

However, before I go on: always confirm you have correctly identified the fungus and check more than one field guide. The two I use are the River Cottage Handbook No.1: Mushrooms, for quick reference and the Collins Fungi Guide for more detailed descriptions. If you are not 100% sure of what you are picking, don’t pick it!

As with all fungi there is a certain amount of variation – there can be many brackets or a few, they can be a range of widths from a few inches to a couple of feet, the brackets can be neat and flat, or can look as though they’ve poured out and frozen, like orange lava, in a Dali-esque manner. The one I found had grown around blades of grass, trapping them like flies on amber. I didn’t take it all because I thought I’d see if the intact part would grow back – if I’m lucky I might be able to collect a regular ‘crop’ over the next few months!

Chicken-of-the-woods, or to give its scientific name Laetiporus sulphurous, is only found on trees, and the trees can be living or dead. It is usually found in the Summer and Autumn, and occasionally in Winter if it is a mild one. It grows most commonly upon oak and also yew, cedar, cherry wood, sweet chestnut, and willow. It is worth pointing out that all Laetiporus species are edible except if found growing on poisonous trees such as yew and cedar.

Whilst on the subject of edibility, I should also mention that Laetiporus sulphurous is only edible when cooked.

Cooking with Chicken-of-the-Woods

This fungus is called chicken-of-the-woods because it’s firm flesh is pale and fibrous but tender, like chicken breast. For that reason it makes an excellent meat substitute for vegetarians. What a coincidence it is that I have a friend visiting me who is vegetarian; we could put the chickeniness to the test.

I did hope it was good because the chicken-of-the-woods I found was pretty big, weighing in at 2 kilograms and bigger than my head! It therefore would keep me and my visiting friend Stuart in meals for most of the week.

Preparing it is simple. Separate the brackets from each other and trim away and tough woody bits then rinse it under the tap briefly to get rid of any soil and creepy-crawlies, then slice it reasonably thinly. Then it is just a question of integrating it into a recipe. As you slice, you’ll notice that the flesh is rather dry, so when frying it you should add a little water so that it can absorb it and become more typically mushroomy in texture.

Its firm flesh is tender and yielding and definitely has a truffle aroma and flavour when cooked – there’s a lot of umami going on in that mushroom! It’s definitely the tastiest wild mushroom I have found thus far. We couldn’t understand why it hasn’t been cultivated as food because it was so substantial and satisfying, and better than any TVP, Quorn or other mock meats. Maybe I’ve found a gap in the market…

Here’s what I made with it:

One third was turned in simple mushrooms on toast  – a recipe can be found for that here – the only changes I made was to add a little water after a few minutes’ sautéing, and to omit the cream/milk. Whenever you try a mushroom the first time, this is the thing to cook for it shows it off in all its glory! It fed 4.

The second third was used in a stir fry with the typical stir-fry veg, soy, (vegetarian) oyster sauce and, again, some water. This really showed off its meaty qualities. Excellent. This fed 2.

The last third was a spinach and chicken-of-the-woods lasagne. I made a simple béchamel sauce flavoured with Lancashire cheese, black pepper and nutmeg, then sautéed the mushrooms in olive oil, added some water and steamed the spinach on top of the mushrooms. Everything was layered up in the usual way, finished with some Parmesan and breadcrumbs and baked. This fed 4….

Now it is all used up, and we didn’t even get bored of it. I do hope another grows back on that tree trunk…

On a Mushroom Hunt

The British crops have been failing left, right and centre because of the all the warm and very, very wet weather we have had over this growing year. The fields and orchards have been chock full of mouldy, diseased-ridden peas, beans, apples, plums and pears. It’s been a great year for mould.

Mould is caused by fungi and luckily, this year has also been great for the fungi we like to eat: the mushrooms, so as long as they are doing well, we shall always have a good meal.

I am pretty new to mushroom hunting, but there are a few species that I already know and love, but faced with 120 000 species worldwide, of which 1841 are recognised as edible (though not necessarily by all). Luckily, I have a background in ecology and evolutionary biology and so I’m okay at identifying and classifying. However, the obvious problem here is that being okay is not good enough when it comes to mushrooms, as you may be rushing down to A & E with the family in an ambulance clutching your Collins Fungi Guide in your clammy palms.

Mushrooms have been held in high regard throughout history because, except for a few European species, they cannot be cultivated in any consistent way. There is no evidence that prehistoric man ate mushrooms, but they were certainly enjoyed in Ancient Egypt and Rome, indeed the Romans were the first to cultivate them. This art seemed to die out with them and it wasn’t resurrected until Victorian times. It’s strange to think that mushrooms were such an expensive ingredient that often had to be exchanged for oysters in many dishes. How times have changed.

Because mushrooms are notorious for their often narcotic and poisonous qualities, there were considered magic during the Middle Ages. Many an alchemist pored over the life cycle of fungi in an attempt to discover the secret of life itself – mushrooms had the amazing ability to create life from decay.

I could go through all the edible species of mushroom in Britain, but that would be rather boring so instead I thought I’d mention the ones I have found so far in this post and then add to it in further posts whenever I come across them.

Identifying Mushrooms

As I said, I am certainly no expert in fungus ID, but it is for this very reason that I take appropriate precautions.

First of all you need at least two good fungus guides: there is such variation within single species that there can be a lot of overlap between them and therefore potential misidentification. More than one book covers more variation. I think it is best to have one book with drawings and one with photographs. The two I use are the Collins Fungi Guide – which is very in-depth – and River Cottage Handbook No. 1: Mushrooms – which is much briefer but is full of hints and tips.

Aside from the mushroom you are interested in, you need to look for other things: are they single or in clumps, or even patterns? Where are they? Fields or woods? If they are in woods, are they on trees, if you what kind? Therefore it is very important that you know some of the trees: the main players are oak, beech and birch, so make sure you know them, or take along a tree guide with you too.

If I am not really sure at all, I take a photo of them where I found them and pick them with their bases intact so I can classify them later when I have time.

Jew’s ear or jelly fungus grows almost exclusively on elder

Do not be tempted to take any advice from old wives’ tales as they are almost always wrong. However, most poisonous species have three features that are worth bearing in mind: scales beneath the cap, a ring and a small sac at the stem’s base. Not all will have all three qualities, so not take this advice as read either. The important thing to remember is that if you are not completely sure, don’t eat it!

Over the last week or so I have come across shaggy inkcap, shaggy parasol, wood mushrooms, the rather anti-Semitically named Jew’s ear fungus and a huge host of , commonly called yellowing knight (though the one’s I found were not particularly yellow).

Two mushroom recipes

I cooked several dishes with our mushroom crop, but I shall just report two here.

Creamed mushrooms on toast

Simple, fast and will show off your mushrooms to their finest. It’s not for dieters.

Ingredients (per person)

1 double-handful of wild mushrooms

2 ounces of salted butter

1 garlic clove, finely chopped

1 tsp of chopped thyme leaves

salt and pepper

5 or 6 tbs double cream

freshly-grated nutmeg

one thick slice of hot buttered toast

Pick over the mushrooms, wiping away any soil with a damp cloth. Melt the butter in a frying pan and when it stops sizzling add the garlic and thyme and fry until the garlic is soft. Tip in the mushrooms and season with salt and pepper. Stir and fry until the mushrooms given up then evaporated their juice. Add the cream and stir, adding a little nutmeg. Serve immediately on toast. Poached egg is optional.

Dried Mushrooms

When you have a glut of mushrooms, it’s a good idea to preserve them in some way. This is a recipe from Elizabeth Raffauld’s 1769 book The Experienced English Housekeeper that turns mushrooms into a delicious, rich and dark seasoning. I’ll leave it to her to tell you how to make it (I have added the odd note in parentheses).

“Take the thickest large buttons you can get, peel them, cut off the root end but don’t wash them. Spread them separately on pewter dishes [or on baking trays] and set them in a slow oven to dry [around 60-70⁰C]. Let the liquor dry up into the mushrooms, it makes the powder stronger, and then continue in the oven till you find they will powder [they will snap easily].

Then beat them in a marble mortar [or a blender] and sift them through a fine sieve with a little Chyan [Cayenne] pepper and pounded mace. Bottle it and keep it in a dry closet.”
