To Roast a Chicken

For centuries, the British were famous for their roast meat, attached to a spit before being hand-turned by some poor soul in front of a devilishly hot fire. We no longer do this, today we cook them in the oven, so technically they are baked meats not roasted ones. Searching for historical recipes for roast chicken is rather tricky: they were rarely roasted – they were a dependable source of eggs after all – so only chickens that stopped laying were eaten, those so-called ‘old boilers’. Instead, capons provided tender meat; these castrated cockerels were put to good, being otherwise surplus to requirement. Unfortunately, in today’s mass production of eggs, male chicks are killed as soon as they can be sexed.

When you do find a recipe, there is little focus on the roasting itself. Check out this recipe for ‘Chicken Endored’ from around 1450:

Take a chicken, draw it and roast it; let the feet be on and take away the head. Then make a batter of egg yolks and flour, and add to it ground ginger and pepper, saffron and salt, and spread it over until it is roasted enough.

By the eighteenth century, there is little more instruction, but we do at least get a cooking time:

To roast young chickens, pluck them very carefully, draw them, only cut off the claws, truss them, and put them down to a good fire. Singe, dust and baste them with butter, they will take a quarter of an hour roasting. Then…lay them on your dish.

We can only assume that the roasting part of the process was already in the readers’ skill set.

My recipe is below, but there are a few things I should mention first: First, never wash your chicken! It’s unhygienic and it will stop the skin crisping up. Second, do not overcook and don’t fear the salmonella; follow the times and temperatures precisely and you will be grand. Thirdly, use plenty of butter and bacon to season the bird and keep moist. I make a flavoured butter for the roasting, but using just butter will still produce great results.

1 free-range chicken

100 g butter, softened

Salt and pepper

Any flavourings you like: e.g. 1 to 4 finely chopped cloves of garlic, 1 tsp chopped thyme or lemon thyme, truffle trimmings, chopped rosemary, grated zest half a lemon, chopped olives, anchovies or capers, ½ tsp smoked paprika. The list really is endless.

8 rashers of dry cured bacon, smoked or unsmoked

100 ml white wine

300 ml chicken stock

1 tbs cornflour

Remove the chicken from the fridge and hour before you want to roast it. Untruss it and preheat the oven to 190°C.

Mash the butter with the salt and pepper using a fork and stir in the flavouring ingredients, if using. Set aside.

Sit the chicken on a board, untruss it and turn it so that the cavity is facing you and carefully lift the skin away from the breasts. The technique is to insert the tips of your middle three fingers gingerly underneath the skin lifting it away from one breast, using your other hand to keep the skin taught, lest it tears. Repeat for the other breast

Next, place the flavoured butter under the skin, massaging it so to evenly distribute it over the breasts.

Make sure there is plenty under there, but reserve around a quarter of it to spread it over the legs. Next, lay the rashers of bacon over the bird so they overlap only slightly.

Weigh the chicken then pop it on a roasting tin. Don’t be tempted to truss it. Calculate the cooking time: 45 minutes per kilo plus 15 minutes and place in the oven.

Leave undisturbed for 30 minutes, and then baste with any butter that has melted and leaked from the bird. Tip to one side, so that buttery juices come out of the chicken. Baste with the juices every 20 minutes or so, and when the bacon is sufficiently crisp, remove it and let the bird roast without its porky jacket for the remaining time.

Remove and check its cooked all of the way through by easing the leg away from the body, it should be filled with delicious, clear juices. If unsure, use a sharp knife to test the juices are clear in thickest part of the leg. If they are tinged with pink, roast ten more minutes.

Remove the tender chicken – be careful it may start to collapse a bit, so be swift and use a fish slice and a pair of tongs to help you guide it to a board safely and all in one piece. Cover with foil to rest while you make the gravy.

Tip the juices into a jug and allow to settle for a few minutes. Place the roasting tin over a medium-high heat and brown any delicious detritus that remains in the roasting tin. Deglaze with the wine, scraping off any brown bits with a wooden spoon, then tip the whole lot into a saucepan and bring to a simmer. Meanwhile skim away most of the fat from the chicken juices and pour them into the pan along with the stock. Bring to a boil and let it bubble away for ten minutes so it reduces a little.

Now slake the cornflour with a few tablespoons of cold water and whisk it briskly into the gravy. Give it a couple of minutes to thicken, and if it seems on the thin side, slake a little more; it’s all down to preference, I prefer a thin gravy.

Check for seasoning and leave on a low heat whilst you get everything ready.

To carve the chicken I find it easiest to remove the legs first, cutting them at the knee to give two thighs and two drumsticks, and then cutting each breast away in one piece, cutting them into four or five thick pieces.

Arrange them on a warmed serving plate and don’t forget to serve the bacon.

Medieval Blanc Mange

I’m carrying on the medieval almond milk theme (I will move away from this topic, I promise) with another post on what could be described as mediaeval England’s national dish – blanc mange. Blanc mange – literally white food – was a simple stew of poultry and rice poached in almond milk. Over the centuries, it evolved into the wobbly dessert we know and love (or hate) today. In France almond soups thickened with rice or bread are still eaten, so it appears that the blanc mange diverged into two different dishes: cold pud and creamy soup.

Blanc mange wasn’t just popular in England, but over the whole of mediaeval Europe. It began life as a Lent dish of rice, almond milk and fish such as pike or lobster, but people liked it so much that it was eaten at every meal, where the fish could be substituted with chicken or capon. Outside of Lent it could be flavoured with spices such as saffron, ginger, cinnamon and galangal, seasoned with verjuice, sugar and salt. It is thought that the dish originates from the Middle East, the part of the world we imported rice and almonds.

It’s worth mentioning that although a Lent dish, no commoner could afford this meal even in its most basic form– imported rice and almonds were very expensive, as were farmed chickens. This was commonplace food for the richer folk of society.

Here’s an example of a blanc mange recipe from around 1430:

For to make blomanger. Nym rys & lese hem & washe hem clene, & do þereto god almande mylke & seþ hem tyl þey al tobrest; & þan lat hem kele. & nym þe lyre of þe hennyn or of capouns & grynd hem small; kest þereto wite grese & boyle it. Nym blanchyd almandys & safroun & set hem aboue in þe dysche & serue yt forþe.

This recipe seems to be for a blanc mange served cold or warm; the rice is cooked in the almond milk and cooled while the capon or chicken is poached separately. Saffron and almonds are sprinkled over the dish before serving.

I’ve looked at a few recipes and they don’t really change over the next two hundred years – always chicken or fish, rice and almond milk and a few mild spices, sometimes served hot, sometimes cold and often adorned with slivered almonds fried in duck or goose fat and a sprinkle of sugar, all before being served forth. They also seem extremely bland with most recipes containing no spices at all. That said, many of our favourite foods are bland: white bread, mashed potatoes, avocados and mayonnaise all belong in the bland club, so bland does not equal bad. In fact, bland food is usually comfort food, and I strongly suspect that this is what is going on here, a bland white food, served at every meal no matter how grand. Blanc mange was mediaeval comfort food, the macaroni cheese of its day!

The blanc mange went from a chicken and rice dish to wobbly pudding somewhere around 1600 it seems. A 1596 recipe uses capon meat, ginger, cinnamon and sugar, and is pretty much identical to the recipes from 1400, but then I find in Elinor Fettiplace’s Receipt Book of 1604 that she gives instruction for a cold sweet. She describes a moulded dessert set with calves’ foot jelly (i.e. gelatine), almonds, rice flour, rosewater, ginger and cinnamon.

Mediaeval Blanc Mange

I’ve combined the methods of several recipes from the fifteenth and sixteenth centuries. The important thing to remember is that mediaeval almond milk would have contained sugar, salt and a little rosewater, so if you want to use the modern shop-bought stuff, you might want to add a little of all three for authenticity. Alternatively, you can have a go at making some yourself.

The spices I went for were ginger and cinnamon, but you can add white pepper, galingale and saffron too if you like.

The only thing I have done differently to the original recipes is to leave my chicken on the bone; bones stop the chicken drying out in the cooking process and flavour the dish.

1 L mediaeval almond milk flavoured with a few drops of almond extract

1 chicken jointed into 8 breast pieces, 4 thigh pieces and 2 drumsticks, skin removed

3 tbs duck or goose fat

white rice measured to the 300 ml line of a jug

½ tsp each ground cinnamon and ginger

1 ½ tsp salt

small handful slivered almonds

Demerara sugar and more salt for sprinkling

Pour the almond milk in a saucepan and heat up to almost boiling. Meanwhile, in a large saucepan melt one tablespoon of the goose or duck and when hot, tip in the rice. Stir to coat the rice grains in the fat, then add the spices and salt. Add the chicken pieces and hot almond milk and stir just once more.

Turn the heat down to low, place on a lid and simmer gently for 25 minutes.

When the time is almost up, fry the slivered almonds in the remaining fat until a deep golden-brown colour.

Serve the chicken and rice in deep bowls with the almonds, salt and sugar sprinkled over.

There you go, pretty easy stuff really. And the verdict? Well, it was quite bland, but pretty tasty with all of the adornments, and the flavours developed a lot over night when I reheated some. The sugar wasn’t as weird tasting as you might expect, and the mild scent of rose water really lifted the dish. The almonds fried in duck fat were amazing, and I’ll certainly be stealing that idea. Will I make it again? Probably not, I must admit, but it was an interesting experiment. Next post, I’ll give you a very easy recipe for a proper dessert blancmange, one of my favourite things to eat. Savouries

About five years ago, a reader asked if I could write about savouries, that now forgotten course served up towards the end of a Victorian or Edwardian meal. Well I’ve finally pulled my finger out and written one, so here we go:

The savoury course used to be extremely popular; a delicious morsel, which was salty, creamy and spicy, serving as a digestive after a rich meal, either as a final course, or before a sweet. What often happened was that the gentlemen ate their savouries and went off to drink whiskey and play bar billiards, and the ladies had their sweets and swished off to the withdrawing room for cards, chats and sherry; there were no non-binary genders allowed here, let me tell you.

I’m a big fan of the savoury course and I often include one in my supper clubs and pop-ups. They had gone out of fashion by the mid-twentieth century, the only real survivor being the cheeseboard.

Savouries have of course lived on as first courses, canapés, teatime snacks and light lunches, and you will have eaten some of them, and many have already appeared on the blog. Delicious morsels like devilled kidneys, Welsh rarebit, potted chicken livers, potted cheese, Patum peperium, rillettes, angels & devils on horseback and sardines on toast have all been served up by Yours Truly at some point. Two of my favourites are Scotch woodcock – a spiced anchovy butter served on toast covered with a creamy, savoury custard – and Locket’s savoury, a slice of toast topped with ripe sliced pears, wilted watercress, and a thick blue cheese sauce which is then grilled, rather like Welsh rarebit. Delicious! It was nice to see Nigella Lawson championing the devilled egg recently; a woman after my own heart.

Savouries are often served on toast, fried bread or some kind of biscuit or cracker. In Eliza Action’s 1845 book Modern Cookery for Private Families, there is just one recipe for savouries which appears to be a proto-croque monsieur, with a small footnote. She doesn’t seem to approve. In the twentieth century, however, you get entire books of the subject, the best being Good Savouries by Ambrose Heath (1934).

What makes a good savoury?

  1. Size matters: it must be one or two mouthfuls, so the best vehicles are toast, fried bread or crackers. However, boiled eggs work well as do oysters in the shell. As long as you can eat it without cutlery, you’re doing good.
  2. Salt: savouries are almost always highly seasoned with salt. This is apparently the digestive part, but it also functioned to give people a good thirst ready for a boozy evening ahead. Salt itself was rarely used, it’s much better to use more interesting ingredients such as anchovies, cured meat and fish, cheese and relishes such as mushroom ketchup, Worcestershire sauce, etc.
  3. Heat & spice: quite a lot of the ingredients served more that one purpose, so most of those listed above fit into this category too, but there was also good old black pepper, English mustard, Cayenne pepper, curry powder and Tabasco sauce.
  4. Strong flavours: other strong flavoured things were used, such as blue Stilton, kidney, liver, game and smoked meats and fish like ham, bloaters and even red herrings.
  5. Creaminess: all that salt, spice, richness and heat was often tempered with something bland and creamy and a variety of things were used for this purpose, such as cream (obviously), egg yolks, savoury custards, béchamel sauces, soft cheeses, brains, sweetbreads, lambs’ fries, fish roes, oysters and left-over poultry meat.

Devilled Chicken Livers

Probably the most infamous savoury is the devilled kidney, but you can devil lots of things. I pride myself on my devil sauce, and at The Buttery devilled chicken livers on toast became a rather unlikely signature dish. This recipe can be easily adapted if livers aren’t your thing: fish roes, kidney, brain, lambs’ fries, left over roasted poultry, mushrooms and even tofu can all be devilled with great success. My favourite is chicken liver because it has all of the qualities listed above in abundance. It’s a good idea to make extra devil sauce as it keeps in the fridge for a good ten days or so, and I can guarantee, you’ll be wanting to devil everything you eat from now on! Here’s how to make it.

Serves 2 as a light lunch or snack, or three as a first course, or six as a savoury course.

For the devil sauce:

2 tbs English mustard

2 tbs Worcestershire sauce or mushroom ketchup, or a mixture of the two

1 tbs vinegar

good pinch of Cayenne pepper

dash of Tabasco sauce

freshly ground black pepper

Simply beat all the ingredients together – taste and add more Tabasco and pepper if you like. There’s no need to add salt.

For the livers:

6 chicken livers

a decent knob of salted butter

the devil sauce

3 or 4 tbs double cream

1 slice of crisp toast per person

chopped parsley

First of all, check the livers for any bitter green gall sacks, which are often accidentally left on. If you sport one, snip it off with scissors.

Get a frying really good and hot and melt the butter. As soon is stops foaming, add your livers. Try not to disturb them. After 2 minutes, turn them over and cook for one more minute. Next, add most of the devil sauce and fry a further minute, making sure the livers get coated in it. Add the cream and let form a lovely rich sauce, turning the livers over in it. Have your toast ready on plates so you can top it with the livers and then the sauce. Scatter over some parsley and serve immediately.

Second Course: Hashed Chickens with Turnips and Roast Quinces (1660)

“It’s all back on again!”: Charles II

So, it’s the next course in my Dinner Party Through Time and we have moved up to 1660. It’s the year of the Restoration of the British Monarchy after that to-do with Oliver Cromwell.

Now this recipe has turned out to be a bit of a mystery because as I write it up for you from my notebooks, dear reader, I cannot find out which seventeenth century cook book it is from! My notes say the year, but nothing else. Those of you that like historical cook books will be thinking “the idiot! It’s the Accomplisht Cook by Robert May that he is looking for.” But no, it’s not there. I have looked and looked; through my own collection as well as the internet and I cannot find these blessed chickens or turnips anywhere. If anyone can help me out here, I’d be most grateful.

Anyway, let’s get on with the recipe. Poached chicken is served here with turnips in a creamy and tart sauce. Many things are served as a hash in old books as well as new. In this case, a hash is essentially meat served with some vegetables. As we go on through time, a hash becomes more of a left-over dish, such as the famous corned beef hash.

Along with the hashed chickens, I served up some quinces roasted up with butter, sugar and honey; a typical way of cooking them in the mid-seventeenth century. I couldn’t do a dinner party through time without including the delicious quince.

One last thing before I give you the recipe – use good quality truly free-range chickens. A mass-produced supermarket bird (even a free-range one) will not cut the mustard. I got my chicken, via my local butcher, from the very excellent Packington. Ask your butcher for the nearest similar supplier to you. They do cost quite a lot more, but it is well worth it, and you can certainly tell by the quality of the cooking liquor from poaching the chickens. It makes the base of a delicious soup, so on no account throw it away!

Right, on we go…

For the chickens:

2 free-range large chickens, e.g. from Packingham

2 onions, quartered

2 carrots, peeled and coarsely chopped

4 sticks celery, coarsely chopped

1 fennel bulb, coarsely chopped

bouquet garni of bay leaves, thyme, rosemary

1 tsp black peppercorns

blade of mace

2 tsp salt

For the quinces:

6 good-sized quinces, peeled, cored and quartered

6 knobs of butter

1 tbs sugar

1 tbs honey

For the turnips:

1 kg turnips, peeled and cut into 2cm/1 inch cubes

100g butter

chicken or vegetable stock

75ml white wine or cider vinegar

1 tsp salt

2 tsp sugar

¼ tsp each ground black pepper and ground ginger

2 egg yolks

150ml double cream

Garnish: thinly sliced toast

It looks quite a list of ingredients here, but it’s actually pretty straight-forward. Don’t worry if some things are ready before others – everything can be kept warm under foil or in a low oven.

Start by placing all of the ingredients for the turnips, except for the cream and egg yolks, in a saucepan, adding just enough stock to almost cover them. Cover, and cook on a bare simmer for around 2 hours until very tender. Next, strain the cooking liquor into another saucepan over a low heat. Beat together the yolks and cream and pour into strained liquor, whisking all the time. The sauce with thicken as you whisk. Whatever you do, do not allow the sauce to boil. Return the sauce to the turnips.

During the 2 hours the turnips cook, get on with the other elements of the dish. Lower your chickens, which you might like to quarter first, into a deep stock pot. Get them tightly-packed and snug. Tuck in the vegetables, herbs and spices. Pour in enough water so that it almost covers everything. Pop on the lid and slowly bring to a simmer; let it plop and gurgle only a little. Check a leg after 35 minutes, if it’s nice and tender, you are done. If you are using a really free-range chicken, it may take a little longer.

As you wait for the chicken and turnips to cook, you can get on with the roast quince. Arrange them in an ovenproof dish and coat them in the sugar and honey. Place knobs of butter between the quince pieces. Roast in a moderate oven, around 180⁰C, until tender; around 20-30 minutes. Make sure you turn them every now and again. When ready, keep warm under foil.

Arrange the chicken meat on or off the bone as you prefer with the turnips and quinces all around. Pour over some sauce and tuck in the toast. Serve extra sauce is boats or jugs.

Forgotten Foods #4: Cock Beer

Recently I have been thinking of re-igniting my interest in home-brewing. Previous attempts to make alcohol have never been successful. I have made white wine that tasted of rotten eggs, and made dandelion wine that, when bottled, exploded spectacularly in my lounge. Now I have a couple of books that spell out the process, and I am a little more confident that I can do it.

Naturally I have been hitting the old cookbooks for some historical inspiration and came across this recipe for cock-beer. In this recipe from 1780, you essentially make a giant cock tea-bag to impart its essence into your brewing beer:

Take 10 gallons ale, a large cock (the older the better). Slay, caw and gut him, and stamp him in a stone mortar. Add spice and put all in a canvas bag. Lower him into the ale while still working [i.e. fermenting]. Finish working and bottle.

That is actually a toned down receipt – many times live cockerels were used. Goodness knows how people didn’t die. Perhaps they did!

It doesn’t stop at cocks in beer, oh no, in Cornwall sheep’s blood – hot from the slaughter – was added to cider; and what did it taste like? According to Andrew Boorde, the 16th Century physician and traveller: “[it] is stark nought, looking whyte and thicke as pygges had wrastled in it.”

There were many tales of men’s heads being thrown into the hogshead along with the beer, and perhaps they weren’t just tales, because the cockerel wasn’t added to the beer for flavour (I suspect that the spices were added to mask the flavour of the bird). The idea is that the animal’s strength, courage and vigour would be imparted into the brew. So these beers were in fact more remedies than proper drinks.

That said, two brave brewers called Chris Thomas and Adam Cusick, brewed a batch from this very recipe, obviously with a certain amount of interpretation. They did welch a little bit by using a cooked chicken. However a delicious ale was produced that was mellow and ‘shared distinct similarities with a strong Belgian ale’. Apparently, William III’s drink of choice was cock beer, and it has been noted several times through the centuries for its superior quality.

My gut feeling is that is must be foul (no pun intended), yet it gets all this praise. Well, when I become a seasoned brewer of beer, I might just give it a go.

One last thing: tantalisingly, it has been suggested that the word cocktail (a work whose origin is famously unknown) comes from cock-ale. O how I wish it was true.

Potted Chicken Livers

Now I know you’re thinking that I am dressing up something French as British by saying ‘potted chicken livers’ instead of pâté but the British have been potting meats like beef, game and salmon, and also liver, for a long time now. Potting helps preserve meat if covered with an airtight layer of clarified butter and kept in a cool place. I am going to write a post very soon on potting meats as well as some other methods of meat preservation soon; the point of this post was for me to write a little diatribe about how the word pâté has the same roots as pot so I could feel a little smug and say that I was right. You know like those people who say raspberry coulis, when they just mean sauce. It turns out that I was a little wrong: my French is worse than pidgin and I just assumed the two words had the same root. I am blaming Elizabeth David for this gaff: she talks of potted chicken livers as though that’s what everyone calls them down her way.

So as it turns out that the word pâté has the same roots as the words pastry and pasta, coming from Greek words meaning ‘small particles and fine textures’ according Harold McGee in his tome On Food and Cooking. So potted livers have a fine texture as they are a mixture of butter and liver, and pastry is made up of particles of flour and butter. Actually, pâté started life more as a chopped assemblage of meats, rather than the refined smoothness we think of today. Oddly enough pâté and pie eventually became interchangeable words in medieval times because chopped meat was often cooked in pastry on both sides of the English Channel. As I have said before, the food histories of Britain and France blend so much there is sometimes no point in trying to discern between the two.

Anyway, I have chuntered on enough now so I shall give you two recipes for potted chicken livers. First, a couple of mentions on preparation and storage: in this recipe the livers are fried in butter until pink, about 4 or 5 minutes on a high heat. It is very important that they should be cooked through and only slightly pink, not just seared and bloody and rare. I don’t want you coming down with Campylobacter or some other nasty food poisoning microbe. The other thing is to cover your potted livers with a good layer of clarified butter along with a lid or a covering of cling film, especially if being kept in a cold larder. The butter isn’t necessary if you are keeping them in the fridge, but they should be covered with something; butter is best though as it stops the livers from oxidising and turning from rich brown to muddy gray (oxidising is harmless, they’re still good to eat).

To make clarified butter, slowly melt some butter in a saucepan over a low heat. Skim off any froth or foam with a spoon and then decant the butter into a jug making sure none of the butter solids get poured out with it.

Potted chicken livers with brandy and peppercorns

This is the classic recipe for potted chicken livers, though I find that there is never enough brandy. I use quite a lot compared to many recipes because I like to be able to taste it; brandy is very rich and it can be a bit too much, especially with all that liver and butter too. To counteract this is I add a good dose of piquant pickled green peppercorns which are available at delicatessen’s shops or online. You can of course omit the peppercorns and reduce the amount of brandy if you’d rather.

Ingredients

8 oz chicken livers

6 oz butter

2 to 4 tbs brandy

3 tsp rinsed and drained pickled green peppercorns

salt and black pepper

clarified butter (optional)

Pick over the chicken livers, removing any large pieces of gristle, carefully removing any little green bile ducts that may be left on them. Get a frying pan nice and hot and add 2 ounces of the butter. When the butter stops foaming, add the livers and fry for a total of 4 or 5 minutes, turning them half-way through.

The idea is for the livers to be cooked, but still a little pink, so cut inside one to check after 4 minutes of frying. Tip the livers and butter into a blender or food processor and return the pan to the heat whilst you deglaze it with the brandy. Tip the brandy and burnt bits into the blender along with the rest of the butter and blitz until the required smoothness (I like mine very smooth). Mix in the peppercorns and the seasoning before potting in one large earthenware pot of several smaller ones. Pour over the clarified butter to form an airtight seal.

Potted chicken livers with gin, rosemary and thyme

My attempt at a recipe rather more Scottish in its flavours, which I think works very well. These livers are much more savoury and less rich than in the recipe above: a good shot of gin provides a subtle aromatic bitter hit of juniper, and the fresh herbs mellow it nicely.

The method is exactly the same as the above except 2 teaspoons each of finely chopped rosemary and thyme are fried along with the livers. Of course exchange the brandy for the gin and omit the pickled peppercorns.
